It's officially springtime in Kentucky, and this Saturday, I'll be making Aunt Jenny's recipe for Violet Jelly for mother's day gifts (from Violet, of course )

I did not know people ate violets. I love them I take them from the yard and place them aroun the fish pond. We have so many different colored ones. They are so pretty. Just to think they are weeds. I will have to try the jelly next year I hope thanks for the input. Lilly

... I just came back in from picking my wild violets, picked for 1 hour and a half. I got inspired to make those yummy color jellies! I'll go back out to pick more and more and more.. as much as I can for these jellies will become part of the Christmas Gift Baskets for families this year...

...the time outside was good for me and my beagle, Abigail. Although, she insisted on helping herself to eat from my basket! We came to an understanding.. she picks her own (I showed her how) and eats her own!

...thought you girls would enjoy these pictures! EYE Candy!!!! I left one light purple violet in for contrast!

You lucky woman, no violets here yet, though lots of other things are popping up all over the yard. I'm waiting for the peepers to start singing, then I might consider the possibility of spring really being here....Once, years ago, I made candied violets to put on someone's birthday cake. If I recall correctly, you paint the violet with egg white and then coat it in confectioners sugar. they look pretty sweet.

Cream sodas are really wonderful, Kathy.

You use a large glass, add ice, sparkling or mineral water (without flavor), cream, and the flavored syrup of your choice. I usually add some fresh whipped cream on the top. Stir and enjoy!

Delicia--it's going to be lovely, here, today. My husband and little one are coming down for lunch and we're going to picnic by the river. Have fun!

Thank you Karrieann!!! Oh how I love those little "faces" they have! And the beautiful clover mixed in, too. I love to see those bunnies munching on that clover!

If Aunt Jenny doesn't mind, I will be glad to post her recipe (at the end of this post)

@Janice...don't leave ANY thing pretty behind...all out to the farm, though I would imagine you'll have plenty of wild ones out that way, too.

I have also made a Violet Syrup using the infusion in place of water and sugar (simple syrup). I like to add it to lemonade or club soda along with ice cubes with pansies or violets in them :) Or make Italian Creme Sodas with it :)

Here it is:

Violet Jelly

1 quart violet blossoms (packed), you will want to look for blossoms that are opened
2½ cups boiling water

Cover and steep for 24 hours. You will want the color to be a darker blue, this will produce a very pretty color jelly. Strain the liquid through cheesecloth.

2 cups of violet infusion
Juice of 1 lemon (about ¼ cup, well-strained, clear)
1 box powdered pectin
½ teaspoon butter
4 cups sugar

Combine violet infusion, lemon juice, pectin and butter and bring to a rolling boil. Add sugar. Return to a rolling boil and time for 1 minute. Remove from heat and ladle into clean jelly jars. Process in a boiling water bath for 10 minutes.

Yield: 4 half pints

This makes a delicious and pretty jelly. Enjoy!

I saw a little clump in my back yard earlier in the week, Jonni. But no blooms. I made a mental note to dig them on Thursday and take them out for transplant. ;) No Violets left behind. LOL!

I have lots of wild violets in my yard and they just started blooming too. How do you make violet jelly, would like to try that.
