A staple for our family is breakfast hot pockets. Just make bunch of scrambled eggs befor your trip with whatever add-ins your family likes. We do cheddar cheese and sausage. At your campsite just butter two pieces of bread with a couple scoops of egg mixture in the middle and put in your pie irons. Very yummy and filling. Easy too. A hot breakfast without having to clean up the cast iron skillets.

It sounds delicious. We will have to try that on our next trip. We have 3 camping trips in Aug - along with 5 weddings, a garden room sale and weekly flower deliveries. Is that nutty or what? I'm playing catch up on my yard and house while I can.

We do corn on the cob on the fire alot. We wash and de-silk the corn....flipping the husks back, but keeping them attached still. Then butter and season the corn and wrap the husks back over the corn, wrap in foil and then lay the corn around the edges of the fire..turning now and then..not right in the fire or on super hot coals or they burn. Wonderful taste!!
Hobo dinners are a big hit with my kids too. We also use bread dough and wrap in a tight spiral around a long stick like you would use for hot dogs over the fire and make bread sticks..the kids love that.

I've been wondering about some new camping recipes too = haven't put too much energy into searching yet though. Tacos and pizza hobo pies are always a hit with my family.

This campfire dessert is sooo yummy and easy.
1. Take a banana and peel down just one strip, but don't detach it.
2. Scoop out all the banana and leave a hollow shell.
3. Mix the banana "scoopings" with miniature marshmallows and chocolate chips.
4. Put this mixture back into the banana shell.
5. Close the flap and wrap the whole thing in heavy duty aluminum foil.
6. Place the wrapped banana near your campfire, but not in it. Leave it there for a little while until the contents all melt together and get gooey. Top it with whipped cream if ya happen to have any. Eat it right out of the shell.

I learned how to make these in Girl Scouts a million years ago.

hobo dinners burger in meat ball form or patties potatoes carrots onion seasoning of choice wrap in foil and bake in the coals.
