Cheryl, I went to your blog but was unalbe to leave a message. I ended up throwing cabbage, carrots + the corn beef all in one pot with the spice package, brought it to a boil and simmered it 3 hours and it was great. The cornbeef was only 2 pounds but the extra cooking didn't hurt it. I was glad I tried it as we will have it again.

Yes! Reuben sandwiches for tomorrow's lunch! Haven't had those in a while ...with REAL Swiss cheese. Had 8 couples for a day-late St. Pat's dinner tonight and there's plenty left for another 8! I DO love Corned beef and cabbage soup made with left overs. Chicken broth works great for the broth or to add to the gravy.

Happy St. Patrick's Day to everyone too! We are having a record high of 78 degrees here in the Chicago area! I can't remember a sunnier, warmer, or more gorgeous St. Pat's Day then this one! I hope everyone is having a gorgeous day too!

I was planning on chicken tonight but my DH called to say he would love corn beef and cabbage, so off to the store I went they had directions on the bag so I'm boiling it per the directions. I'm not a big meat eater but I will enjoy the cabbage and carrots. Happy St Patricks day to all.

I'm having a house full of friends and neighbors for a late St. Pat's day dinner tomorrow. Am cooking my corned beef today though because it slices easier and I can skim lots of the fat off the broth once it sets up to make a "skinnier" gravy LOL.

Yummm can't wait...one of my favorite dishes!!!
