There are a few things...my pesto is in the freezer & the boys had empty jars of peaches, pears or applesauce under their beds, not pickles.

Today I was interviewed by the local paper for an article on food preservation. I think she got more than she expected. The kids & I meet her at a friends house that we picking raspberries at. She photographed us and asked lots of questions.

I gave her a list of the foods that we preserve and she wanted to know how the "normal" person could do these things. I told her about Mary Jane Farmgirls and that now matter where we live we can do some "farmgirl" things.

She asked me why would someone do these things if they can get it cheaper at Costco. My reply was, "can they?" with gas prices and the cost increases of over 20% in food over this last year.

My kids even had comments that she wrote down.

We'll see what she writes. I'll post the link to the article when it comes out next week.

The paper came out tues. nite. A friend brought it over. So here's the article:

And like most newspaper article there are some liberty's taken in the writing, but overall Judy Halone did a great job. She told me I could build a great business teaching these classes to the community. I have already gotten 2 requests for classes this morning.

Figs are high in pectin & fiber. I don't know if you added pectin to your preserves, but what about adding other fruit with the figs your next batch.
My mom made strawberry fig jam that was delicious. Good luck.

ps-you might try warming the jar of preserves in a pan to soften them and get them out. :O

That is cool. Can you tell me how to preserve figs. I tried. The fig preserves are like rock. I can't even get them out of the jar.

Kristine - I look forward to seeing what they put in the paper. I know that I would rather have farm fresh produce straight out of the garden rather than having something that was trucked in many miles away with all the junk they put on it to keep it fresh. There isn't anything like cooking and chewing on a fresh piece of round corn that was picked that day.

Alee, she couldn't even take any because of newspaper policy's, but she didn't have any problem nibbling on some berries. :)

Excellent! I think it is funny how surprised some people are when they hear about harvesting and preserving one's own food. The cost is not the issue at all, but I;'m sure that the work involved is probably a shocker to a non farmgirl type, it will be fun to see what she has to say, keep us posted...
