Hello to all the cooks! Am I the only one who has a problem when I make DIVINITY candy? I don't think I can remember a single time that I've made this candy that it came out right the first time. And that's what happened this morning. First try the problem was obvious, recipe calls for 2 egg whites, I had 4 eggs on counter (being a frugal New Englander I decided I would use the first two yolks toward a custard so needed 2 more) but didn't wait...into the candy went 2 more egg whites! Second try, put on the sugar and water to make syrup, takes about 10 min or more was done in 4...I had forgotten the corn syrup. Last try, which was encouraged by Art who volunteered to clean/blast the pan and utensils first....SUCCESS, at least so far it looks good. Of course I'm making this to send to one of our daughters in SC, it's her favorite at Christmas so determination set in. Oh, the first batch which of course was too thin and would 'collaspe' is in a small square pan, I think I can cut it into fudge - might work. And then I thought I might dip it in milk chocolate like I do the Truffles I make, will let you know how that works.
Someone please reassure me I'm not the only one who has problems!

well Nancy-Jo I guess you can figure out what this Divinity candy is now..you drop by spoonful like drop cookies and after awhile the outside forms a soft crust and inside is like marshmallow. It is very sweet, someday I'm going to figure a way to change that if I can.
And as you can also read I had success and will send it off tomorrow. Thought I'd wait and see if my idea works of dipping the squares, then I'll send some of those too. I also have another thing to try at the same time...I bought a box of flat vanilla cookies, somehow I will attached a large marshmallow to the center of the cookie - then dip the whole thing into chocolate coating (while I'm playing with the Divinity squares!) and we'll have SNOWMEN HATS!!! AND THEN I'LL SEE IF I CAN GET A LIFE - HA!!!!!!

first comment to MaryBeth who is making this candy sound WAY TOO EASY! - ha. but thanks for the recipe. I'm sure you could see from my post that most of my problem was from making mistakes. The recipe I usually use is from my old Opp, Alabama cookbook (anyone from there????) but today used the one in Better Homes & Garden, the recipes in there are just about fool proof - and good.
I even noticed that they tell you to let the candy thermometer reach hard ball stage rather than soft so I guess someone at their test kitchen has been 'tweaking' the old recipe. But all in all the Divinity turned out ok today - and the first batch I messed up and put in a square pan destined for a 'white fudge' is fine. I'm going to play with that in the morning and dip in chocolate as I mentioned...OINK! So MaryBeth do you have Southern roots maybe? and do you know why it's called Divinity? My thought was the pure white color maybe????? Thanks for your import.

The success to making divinity, in my humble opinion, is taking all the time it says to cook and the stirring. Stirring long enough--until the whole familys arms are dropping off. here's the old family recipe that works. DIVINITY
Place in sauce pan over low heat: 4 cups suga
1 cup light corn syrup
3/4 cup water
Stir until sugar is disloved, then cook without stirring to 255 (a little ball dropped in cold water forms a hard ball). Remove from heat and pour, beating constantly, in a fine stream into
3 egg whites, stiffly beaten
Continue beating until mixture holds its shape and loses it gloss.
Add 1 tsp. vanilla
1 cup broken nuts.
Drop quickly by spoon on waxed paper or spread in a buttered pan. 8 doz pieces. ENJOY MB

Well Hannah Jo, I don't have a problem with divinity candy because I don't know what it is. HA. Hope you can get a good batch done and mailed off to your daughter.
