I want to try to make elderberry syrup, and it calls for a pound of elderberries, how many cups is in a pound? I looked on line and I cannot find out.
Does any one else make it?

Thank you for the testimony of the elderberry juice, I have a bunch, so I need to find a scale to borrow to measure it out.

Sorry don't know how many cups in a pound. We pick elderberries, and use a steam juicer to get the juice. Prior to that we used a little water in a big pot and cooked them down that way. Freezing the berries makes it easier to get them off the stem. For 35 years we have just juiced them on the stems, cutting them down short. Anymore we just combine different home canned juices, sweeten to taste and drink it. I won't get a flu shot either, and elderberry works!

If fresh are around, you can absolutely use them as fresh, but that explains the pound, lol. They will weigh more that way :) with that said, if you pick extra, you can always dehydrate the rest for later use, in case you need more syrup :)

I was using fresh, according to my recipe, it said I could use either,
the recipe is for elderberry flu tonic
it calls for 1 pound of dried elderberries, or fresh can be used,
They are now ripe in the mountains and I need to boost my immune system, I work in health care and refuse to get a flue shot, and do not want to get sick. Should I dehydrate them first?

a pound????? that is a whole lot of elderberries and therefore syrup!!! are you using dried elderberries? i might have enough to measure it for you.

Danyel, I just double checked the butter in my fridge. 1 lb. of butter = 16oz which equals 2 cups.

Elderberries will weigh differently than butter but that may give you some idea.
