Anyone make their own herbal vinegar?

I couldn't resist picking up some Tarragon at our local nursery this afternoon and as soon as it stops raining I will plant them in clay pots and put them on the deck...Never grew Tarragon before but I LOVE Tarragon Vinegar!

Any other suggestions for different types herbal vinegar would be greatly appreciated....

I don't heat the vinegar. Let it sit for 6 weeks.

You don't have to heat the vinegar or anything? just crush your herbs into a jar and pour over the vinegar? How long does it have to set before you can use it? I think I am going to make some tomorrow.

Yes, I am making my vinegars separately to see how they do. Maybe later on I might do some combinations. All I do is just fill whatever size jar with herb, top off with vinegar, cover with plastic wrap and then cover with the jar lid (you could also use plastic jar lids, but I don't have any). Shake it daily.

I just started several batches today: plantain, comfrey,
nettle, hawthorn, catnip, wild dagga, thyme.
