I have more than I know what to do with and I have already canned 8 jars....sundry maybe? GIMME SOME IDEAS!!!

I'm not quite sure how I feel about this, but I heard on "The Splendid Table" on NPR the other day about tomato ice-cream?!?!?

I think I would absolutely LOVE a cream cheese and tomato jam bagel. What a great idea! Yum!!!

Have you thought about a tomato jam or tomato marmalade? I bought my sister (who was living out of state at the time) a jar from a local commercial place that specialized in old-fashioned jams and jellies. She loved it - even brought it up last week, and the gift was 10 years ago!

yep....I always hot water bath my tomato things. I mainly use the freezer for meat and stuff like that so I don't freeze alot of fruits and veggies (except corn and peas...I both can and freeze them)

you can just hot water bath can tomatos like that can't you? The sauce recipe I used was a freezer recipe...

I ALWAYS every year end up bringing in 4 or 5 boxes of green tomatoes when the frost gets to be too much and I am tired of covering and uncovering plants... I always fry some, pickle some, and let most of them ripen to use and can as I can. We use tons of salsa so i have never canned so much that we have TOO much. I have one jar left from last Sept...and that is only because I stuck it back to enter in the fair this August!
I have never frozen tomatoes..but alot of folks do it.
I can alot of tomatoes plain too..just quartered, not peeled, and heated up with a little water, once good and hot and put in jars covered with the hot liquid I add a teaspoon of salt to each quart and a tsp or either vinegar or lemon juice for good measure. We use these all sorts of ways through the year..and it is quick.
Oh MaryAnn..that potato and fish chowder sounds wonderful!!

Freezing maters is easy. Just wipe clean, take out the stem and core, and freeze on a cookie sheet. When they're frozen, transfer them to a freezer bag. When you want to use them, run their frozen selves under hot water and slip off the skins easily; then throw in your soup kettle or start on medium low heat with a tiny bit of water. I like to take a saucepot and saute some chopped peppers, onion, and garlic in some olive oil. Then I throw in some peeled frozen tomatoes and gently bring to a simmer. I run a knife through them and chop them coarsely, then throw in some oregano, thyme, and marjoram. They are wonderful either plain or tossed through some pasta. I like them, seeds and all. Sometimes I don't even bother to remove the peel.

I also like to get it simmering and throw in some nice cubed leftover baked potato and some cubed fish. I use mostly cod, but tilapia works well, too. You simmer just until the fish flakes, and then you serve. My oh my, that makes a great chowder!

I have made 8 cans of just sauce.....do I need to just blanch and can the maters to just keep as maters? or can I stick them in the freezer as is when ripened...I had to take a huge bulk of them green off the vines because the vines are dying off....

Salsas, both canned and fresh. Ketchup, sundried, pasta sauce - endless possibilities. I had alot of tomatoes this year also, in fact DH mentioned that it looked like a tomatoes processing plant in our kitchen for a few weeks. Now the plants are slowing down because of the cool weather - but I got a lot of stuff made with them and ate just as many fresh.

My favorite, and easy is tomato juice. Just quarter or halve the tomatoes and boil them, then put through a sieve (the kind with a hand crank to push them through the sieve) and then bring back to a boil, put in hot sterilized jars and seal. You can add salt if you think you need to or a tablespoon of lemon juice per quart and boy is it good! Makes an exquisite bloody mary. And you don't have to do a whole canner full. If your tomatoes are high acid, you don't need to process them. My former MIL and another friend taught me this, and it has been my favorite. I also just freeze the maters whole, and then you can throw them in soups, stews, etc. Have fun! Judy

I done salsa, and diced tomatoes canned up. I also dried a bunch of the paste & cherry ones.

I would do whatever your family uses the most of. That's why I do the diced they can be used so many different ways. In a sauce, soup, casserole, queso dip. We use a lot of them!!!

I wish I had your problem. My tomatoes just didn't do much this year. I dried some and I exchanged some of my pears for a half bushel so I'm going to make ketchup which takes quite a few tomatoes. I'm excited about the ketchup because I'm trying so hard to cut high fructose corn syrup out of our diet and you just can't find ketchup without hfcs. You could also can salsa if you have or can get some peppers.
