Posted - Apr 19 2010 : 07:45:28 AM My friend and I had a hay day picking wild violets to make violet jelly yesterday! I opps'd and didn't add the right amount of pectin the first time and got....syrup...not too shabby. The second time around gave me beautiful purple-ish red jelly. Next on the agenda....dandelion jelly. Suggestions as to what to serve with?

I ended up with syrup the first time I made this last year. I used the syrup in Lemonade and also added pansies and violets to the ice cubes. I have used this over Vanilla Ice Cream and to make Italian Cream Sodas as well. The jelly is great on scones or biscuits.
