I have a bunch of seeds that I'm harvesting from my sunflower heads and I'd like to save some for planting next year. Do I need to do anything special other than bag and tag them?

Yes , they need to be completly dry, or they will mold.

Well, they aren't completely dry, so should I just put them on a cookie sheet and let them dry for a few days before saving them in the container?

Once you are sure that they are completly dry, put in an airtight container, and put in your freezer, they will keep for several years that way.

just make sure they are dry before you harvest them, you don't want them to be moldy/midewy.Store in a bag and tag them with the date.a paper bag works fine for them.
