I have Lemon Cucumbers coming out my EARS and I'm not sure what to do with them. Any suggestions? I have given away as much as I can, but I can't give them away FAST enough. Does anyone have any recipes they would like to share? (besides the vinegar/tomato/onion dish-- which we LOVE, but are getting VERY tired of) Can they be canned somehow? Maybe as a relish? I don't think they'd work too well as pickles. Thanks ladies! ~~~ Tracy

Thanks for your sympathy Kelly, but I DID get quite a few cucumbers out of the garden this year, (enough to make LOTS of pickles!) along with beets, squash and eggplant. I don't think she likes the "pricklies" on the eggplant and squash bushes-- she hasn't bothered those AT ALL, and the beets? I'm not sure. (Even my goats won't eat those) But it has been frustrating about the other plants. I was looking forward to canning some of my tomatoes and saving the seeds for next year. I might actually be able to salvage some, but we'll see. I was able to can some tomatoes that my friend and I picked at her uncles garden, so this year has not been a COMPLETE disaster. Thanks again for your "condolances," and yes--- seeing that pig run SCREAMING from my garden was VERY funny!!! I don't think I just 'surprised' her, I think I put a STING on that big pink butt of hers! (I know my HAND hurt for awhile afterward!)

As for getting my husband to do anything with the garden? Well, I certainly won't hold my breath. Actually, I'd prefer he DIDN'T help me because he thinks everything should be done HIS way, and not the way I want it. So that part I don't mind so much. Hugs~~~ Tracy

Tracy... so sorry about your garden. But I sure did get a good chuckle out of your post!! (people at work probably think I am crazy laughing out loud to myself!)I could just picture your pig squealing away as she ran. Weee Weee weeee all the way home! Probably scared the bejeebies out of her! That sure does sound like a Kodak moment!

Boy she sure made a mess out of your garden & that is sad, but like you said they are pigs! Hopefully you will be able to salvage something to use after all your hard work.

Sometimes to get those hubbies out there fixing what you need... start using their tools..Ask lots of ?'s. It will just be easier for them to do it themselves.

Thanks for the sites Kelly. I will check them out--- though I am sad to report that I am no longer in the "Lemon Cucumber business." My pot bellied pig, "Opal," has FINALLY discovered my garden. She started with my green beans. Then she plowed through my corn (but apparantly didn't like THAT). Next, it was my tomatoes. They are all still green, but she must have found a few ripe ones because I found her in there the other day munching away. At first I wasn't sure what was making such strange noises and why the bushes were vibrating, but a quick check around the backside of the garden revealed a hairy pink hiney and an overzealous wagging tail. I slapped that butt so hard she shot out of the garden like a rocket and squealed all the way to the corner of the house!!! If I weren't laughing so hard at the sight of that I would have been crying after I saw what she did to my plants!! There she was screaming at me in indignation, her whole entire face GREEN!!! It was DEFINITELY a "Kodak" moment. But Oh...! My POOR plants!!!!

Now she's moved on to my cucumbers. (Sigh....) I went out today to see if I could scrounge some up, but most of them had bites taken out of them and the vines are all smashed. I worked so hard on that garden, but I can't blame her for being a PIG-- because she IS a pig!!! Now maybe my husband will understand WHY I want a fence around the garden patch. So what if he can't get is TRACTOR in there! He doesn't help me take care of the garden ANYWAY!!! But thanks to everyone who replied to my pleas for help. I really appreciate it-- and Kelly, I'll save those recipes for NEXT year!!! And Starmeadow? I'll remember that!!!! (but I think I will stick to unlocked cars belonging to FRIENDS & FAMILY!!!) I havent made any of these, but they got good reviews. These are just a few but you can do a search & then by rating. I havent made anything that I havent liked from this site. I read the reviews & they are usually spot on. I have the opposite problem. Mine won't grow. Oh well to try again next year! Let us know what you decide to make :)

Take a bunch of boxes of them, find a parking lot, find cars with unlocked doors, and GIFT them with a box of cucumbers!!!! Heard this story (but about zucchini) on Prairie Home Companion. I laughed my socks off but I also love listening to Garrison Keillor and his tales!!!!

I too have an over abundence of them last year. I made relish with them and it turned out great, just like you would with pickling cukes, we are still eating it from last year, it made that much! Of course how much relish can you eat in a year!!

You can definatly make pickle relish with them..I have done it many times. Some years those just do so well, don't they??? I have made bread and butter pickles with the smaller ones too..sliced they work great. But relish..they are MADE for relish!!!

You could always take them to a local church on Sunday and leave them in a box marked "Free" with maybe a short description of what they are.

Marly, believe it or not, there IS NO SHELTER in my hometown. As far as I know, there aren't even any homeless people. Once in awhile I will see hitchikers near the freeway exit ramps at the end of town where our Walmart store is, but other than that, I've never seen any around town. Of course, that doesn't mean there AREN'T any either. I do know that there IS a shelter in a town about 30mins away from me. I don't get there often, but I will keep that in mind next time I DO happen to head that way.

Heather-- you got a recipe to go with that suggestion?

I know you don't think they would work well as pickles, but I would still try to pickle them. Cause lots of things taste good pickled-tomatoes, zucchini, carrots, cauliflower, etc. So it may be great. I would also do a relish!

I like cucs in a corn salad. Corn, mayo, cucs, etc. :) YUMMY! :)

Cucs believe it or not also taste fine to me cooked. Like thrown in a soup, and such.
