Because we had a lot of rain this spring, we couldn't put our tomatoes in until way too late and they didn't ripen well. So we have tons of unripe green tomatoes. It's a shame to lose them. Does anyone have any way of using them?

Thanks,
Patricia

Happy Wishes!

Hi Patricia! There is a great Picallily recipe in the Ball Canning book that my grandmother use to make. It's a great way to use up green tomatoes and other things you might have left in the garden. It's good especially for breakfast with eggs, on sandwiches, etc. If you can't find the recipe let me know and I will be glad to send it to you. Take care!

Green tomato pie is good. It was my dad's favorite. Tastes like apple pie.

I'm still hot...it just comes in flashes.

how funny..that is no doubt why my tomatoes are ripening so fast..there are boxes and buckets of apples stored right now in the laundry room too...I should have thought about that. It is a good thing though since I am ready to get my canning done.

I have 30 tomato plants I keep talking to myself. Here in North Jersey it's getting iffy...38 degrees one night 10 days ago. Ouch! Found www.backwoodshome.com has several good recipes for green tomatoes, plus the storage idea that several mentioned here - in the laundry room, cool place - their extra tip which I have tried with great success - add a few apples here and there to expedite ripening.

Love to hear more about the green apple pie. Recipe anyone?

I have always brought them into the cellar and hung them upside down still on the vine for a week or so. They seem to ripen up that way too. I have a lot of brandywine tomatoes that are going into the hanging mode this weekend. Still hoping to get a couple of ripe ones before I have to bring them in.

anyone ever try green tomato pie? I found a recipe for it, but it almost sounds gross..If someone could tell me that it's not I'd feel much better about it. I have enough tomatoes to make it, but I am just working up the courage to actually go through with it.

Does anyone have the recipe for the green tomato salsa? of I can't make myself put them in a pie that could be the ticket.

you can be oh so smart, or you can be oh so positive. I wasted a lot of time being smart I prefer being positive.

Patricia..same problem here since we are only 3 hours south of you...and I planted 30 tomato plants this year!!!!
I have 6 boxes of tomatoes slowly ripening in the laundry room..they do ripen..just watch them..seems like they will be green forever and then...boom...ripe ones! My laundry room is the coolest place in the house most days..besides the cellar and I would not be able to keep an eye on them as well down there. I make fried green tomatoes, pickled green tomatoes..will bring you a jar tomorrow.....and use some in salsa too. If you like mexican food much (we do) you can make a great green sauce with green tomatoes, tomatillos and peppers and onions pureed together and cooked until thick...yum!! I may have to try picalilly this year..there are so many versions! My grandma always made it.
good luck!!

Patricia, there's always Fried Green Tomatoes! ... but if you're not into that, there are alternatives. I always bring my green tomatoes in, lay them out on newspaper in a cool dark place (my basement), and they will ripen on their own and be just as tasty as if ripened outdoors on the vine! Good luck!
