When do you harvest rhubarb? This is it's second year. We left it alone last year to make sure it got a good root system. Now we are craving strawberry rhubarb cobbler.

The stalks should be thick and sturdy, like an inch across, before you harvest. That doesn't usually happen until the third year. But if you have spindly stalks but lots and lots of them, you might steal some for a pie like strawberry rhubarb--- it's not all rhubarb and probably won't do much harm.
Remember to throw away the leaves; don't feed them to livestock. They're poisonous.
We just planted some new rhubarb this year, and it's just now coming up. It was from these odd slices I ordered through the mail. I wanted plants, but I got these dormant root slices. Weird. I bet I'll have to wait for the third year. But I wanted the variety to be Valentine. It's a favorite to me, and I adore it in rhubarb dumplings. It's a kind of sweet roll with rhubarb coiled into it, and the red of Valentine, plus the great flavor, made it my first choice. |

I'd pick enough for your pie if the plant looks strong and healthy.
