I received my recipes from Vanessa today! One for Cincinnati chili and one for Zucchini tots. They both sound wonderful - thank you Vanessa.

I will have Denise post in SPG’s when y’all get your recipes.
I got mine from Judith for Brining a Brisket for Corn Beef. I can not wait to try it. But, I did email Judith as she sent it digitally.
This has been such a fun swap and we can do another one in a few months.

Here is my recipe from Judith. I cannot wait to try it.

Corned Beef

Brine
4 quarts water (1 gallon)
1 cup kosher salt (See Note 1)
1/2 cup packed brown sugar
1/3 cup pickling spice blend
2 tsp pink curing salt (I got mine on Amazon but some butchers have it)
4 garlic cloves minced
To Make Brine
In a Dutch oven or large stock pot add the water, kosher salt, brown sugar, pickling spice blend, pink curing salt, garlic and stir. Bring to a boil, lower to simmer and cook until salt and sugar have dissolved. Turn off heat and cool.
In a large container or large sealable plastic bag place beef brisket. Pour cooled brining liquid over and cover or seal. I put plastic wrap over the meat and put a plate on top to keep it submerged. Store in a refrigerator for 10 days, turning beef on day 5. On day 10 remove from brining liquid (discard liquid) and cook. We love it cooked in Guinness.
Soak overnight in cold water to remove excess saltiness — we didn’t do this the first time and boy was it salty

My recipes went in the mail Monday. I know that the mail is crazy from the card swap on the main forum. Denise and I live close enough that we should get each others mail within a day or 2. Debbie in OR will get her card before Denise will. It took over a month for a card from Marlene to make it to me from FL and 3 weeks to get a card from Connie in TN. I think one time the mail monsters ate Karen's cards LOL!

Linda’s recipe package arrived today. The family recipes are great as are the stories she shared.
Also thank you for the tea/kitchen towel to honor Jubilee, love the theme and the doggies on it. So very nice.
