I cannot wait for my Corn Beef and all the fixings! I will try Denise’s Soda Bead Tomorrow.

Who else celebrates with a traditional meal?

I do sometimes, but this year I am making Reuben casserole. However, I make it with coleslaw instead of sourkraut, which is how our local pub makes its Molly Malloy sandwiches. So I guess I'm making Molly Malloy casserole instead! :D

Sure! When I get settled later, I surely will! It makes a big pan, but I have frozen the leftovers before and thaw/reheated later and they are still delicious.

Growing up the only thing we did to celebrate was pinch each other if someone forgot to wear some green :) Fun times unless you're the one that forgot! I've never made a traditional Irish meal, but that casserole sounds yummy! I love Rubens.

I am making corned beef but instead of a boiled meal I am making Colcannon, the soda bread and am checking my mom's cookbook for something else. I hope those of you who aren't Irish will still join us in celebrating!

Debbie, my dad would say that is definitely the women in his family. Lol.

Mmmmm! I love Colcannon! My mom used to make that for me when I needed major comfort. That and a hot cup of tea was better than ice cream for a break-up! Haha!

As promised!

Open-faced Reuben Casserole

6 slices seeded rye bread, cubed (5 1/2 c.)
1 (14oz) can sauerkraut, drained
1 lb. thin sliced deli corned beef, cut in strips
3/4 c. Thousand Island dressing
8 oz. shredded Swiss

Heat oven to 400. Spray an 11x7 (2 qt.) glass baking dish with non-stick cooking spray. Place breadcrumbs evenly in bottom of baking dish. Spread Sauerkraut evenly over bread. Layer corned beef over sauerkraut. Pour dressing over corned beef. Spray a sheet of foil with cooking spray; place sprayed side down over baking dish.
Bake for 20 min. Uncover, top with cheese. Bake, uncovered, 5-10 minutes until casserole is bubbly and cheese is melted.


* When I make it, I substitute creamy deli coleslaw for the sauerkraut. I also make my own Thousand Island by mixing ketchup and mayo.

Authentically, corned beef and cabbage isn't an Irish dish. But because it is readily available people here in the states use it to replace pork in the boiled bacon and cabbage dish that the Irish make. Corned beef and cabbage is traditionally a New England dish. I'm sure that is because the Irish brought their original recipe but the meat was changed over the years to beef.

I'm curious - does anyone know if they drink green beer in Ireland today? Or is that an American Irish tradition?

Hehe! Noooo... Not unless it's a tourist trap bar. Most "real" Irish pubs over here won't serve green beer either. Actually, in Ireland St. Patrick's Day is more of a religious day. Is's a Catholic Saint's day. In the rest of the world, it's a celebration of Irish heritage, or more recently, just a celebration of Ireland itself. But green beer is actually kind of a no no in certain circles. Guinness, or maybe Harps if you aren't into the real dark stuff is the drink of the day.

Oh yes Guinness is a tradition in our house on St. Paddy’s Day. I even put a bottle in with my Corn Beef when I cook it. It is the only time we drink it!

No green beer in Ireland.
It is a religious holiday but not only for the Catholics. It is celebrated by the Protestants as well. Instead of green the protestants wear orange but they do celebrate St. Patrick as he was a Christian and brought the gospel to the Irish after he returned to Ireland. There is an excellent book about him called "Let Me Die in Ireland" If you ever get the chance to get it and read it, it is well worth your time. It sets a lot of things straight about what is true and what is not about Patrick.
