April sharing her recipe made me think maybe we could share some of our favorite recipes here if anyone likes.

I have a favorite I use often for
Irish Soda Bread

Serves 8

Ingredients:
3 1/2 c. all purpose flour
2 tbsp. caraway seeds (optional)
1 tsp. baking soda
3/4 tsp. salt
1 1/2 c. (about) buttermilk

Preparation
Preheat oven to 425 degrees
Lightly flour a baking sheet.
Mix flour, caraway seeds, if using, baking soda and salt in a large bowl.

Mix in enough buttermilk to form moist clumps. Gather dough into ball.
Turn out onto lightly floured surface and knead just until dough holds together. About 1 minute.
Shape dough into a 6-inch diameter by 2-inch high round. Place on prepared baking sheet.
Cut a 1 inch deep X across the top of bread, extending almost to edges.
Bake until bread is golden brown and sounds hollow when tapped on the bottom, about 35 minutes. Transfer bread to rack and cool completely. Enjoy!

I recently got a new CrockPot. This recipe was on the box. I made it last night and it was awesome. I had ham steak and asparagus with it but it was too much food. The Mac and Cheese would have been enough by itself -- it was so rich and delish.

Jean, I’m going to share this with my mom. She made Mac and cheese in her crockpot once and lost the recipe. She has been trying to find another that is like the one she made.

Hahaha Debbie, that would definitely cure stress, then end the day with a long hot bubble bath, lol.

A day hemmed in prayer is less likely to unravel.

Here's my Grandma Daisy's Granola - we love it and are planning to make a batch for gifts at our upcoming quilt retreat.

6 cups regular oats, uncooked
1 cup flaked coconut
1 cup wheat germ
½ cup shelled sunflower seeds
½ cup sesame seeds
½ cup chopped almonds
1/3 cup chopped cashew nuts
¾ cup honey
½ cup coconut oil (original recipe called for vegetable oil)
1/3 cup water
¼ cup firmly packed brown sugar
1 ½ tsp vanilla extract
1 tsp salt
1 cup raisins (optional)


Combine first 7 ingredients in a large bowl; mix well and set aside. Combine remaining ingredients except raisins; pour over oat mixture and mix well. Spread mixture evenly into 2 lightly greased jelly roll pans. Bake at 350 degrees for 30 minutes or until golden brown; stirring every 5 minutes. Cool. Add raisins, if desired and mix well. Store in an airtight container. (Makes 10 ½ cups).
