In my kitchen I am baking a Mandarin Orange cake for Sunday's dessert.
I was wondering if anyone uses one of those cutters to make french fries? If you do would you have one to recommend? I'd like to find something than cutting them up with a knife when doing them up to freeze.

I made the cake this morning. Decided to make it a bundt cake Put it in the oven and got a call from my daughter about the egg hunt starting. I had 10 minutes to go on the cake so I shut the oven off and left it. When I came back it didn't look browned like it should be so I turned the oven back on and let it go till it looked the way it should. I checked it prior to turning the oven back on and the toothpick came out clean. Came out of the pan nicely so I am hoping it isn't dry. Usually this type isn't so I'm keeping my fingers crossed! |

Yummy things happening at your house, Denise!! My kids are grown and out of town so I did not make anything to eat that is special. Some friends did invite us to brunch tomorrow so I am sure there will be plenty of delicious things to eat. I did dye a few eggs on Friday like I have done for years just because. I will use them in salads or for a breakfast sandwich this week. |

Winnie, I always keep a dozen boiled eggs in the fridge for quick snacks or sandwiches. I didn't dye any this year though. |

Grilled Ranch Chicken Chopped Salad Prep Time10 minutes Cook Time10 minutes Total Time20 minutes Servings6 servings Ingredients 2 chicken breasts 1/2 cup Hidden Ranch Avocado Ranch dressing 4 cups chopped romaine lettuce 2 cups chopped spinach 1 large tomato diced 1 large sweet pepper diced 1 cup sugar snap peas 1 navel orange peeled and diced 1 avocado pitted and diced 1/2 cup pecans toasted 1/2 cup crumbled feta cheese Additional ranch dressing Instructions Place chicken breasts in a medium bowl and pour ranch dressing over top. Place bowl in refrigerator and let chicken marinate 3-4 hours. Remove chicken from marinade and grill over medium-high heat, turning occasinally until juices in chicken run clear, about 10-15 minutes. Once chicken is cool enough to handle, slice chicken into bite-sized strips. In a large bowl, toss lettuce, spinach, tomato, pepper, snap peas, orange, avocado, pecans, feta cheese, and chicken until combined. Drizzle additional ranch over salad and toss to coat. Serve salad immediately. |

Crockpot Chicken Alfredo
INGREDIENTS
1.5 lbs boneless, skinless chicken breasts, 3 breasts, cubed
15 oz jar alfredo sauce
1 teaspoon dried onion
salt & pepper
1/2 cup sun dried tomatoes
1 cup fresh baby spinach
1/2 lb pasta cooked
INSTRUCTIONS Cube your chicken breasts then season with salt & pepper.
Add the chicken to the crock pot and sprinkle with the dried onion.
Pour the jar of alfredo sauce over the chicken. Add a little water (about 1/4 cup) to the jar, closed the lid, shake it, then add that to the crock pot as well.
Cover and cook on high for about 4 hours or low for about 6.
Once the 4 (or 6 hours) are up, add in the sun dried tomatoes.
Tear up the baby spinach and toss that in, too. Stir and let the spinach wilt and the tomatoes slightly soften. Meanwhile, cook the pasta and spoon sauce on top. |

Denise, those both sound good. My kitchen has too many eggs. So I steamed a bunch. Peeled then, washed and dropped them into jars. I has added a layer of onions first. Then I added more eggs, the spices, more eggs and the vinegar and water I had heated. Then I gave each jar a plastic lid and as they cooled they went to live in the fridge. I tried three recipes, none of them were my tried and true recipe. I hope my hubby likes them. I suppose my dil and my neighbor may decide that my free eggs are ok. When they get too pricey at the grocery. Anyway, I'm about to steam a bunch more. |

I make pickled eggs all the time Marilyn. I keep a dozen boiled, unpeeled eggs in the fridge too. The kids love them for a snack. JT likes the pickled eggs. I use beet juice vinegar,cloves, etc. and put them in a couple of quart jars. They don't last long. |

Denise, this is a handy storage guide and I am going to take some notes from it and add it to some other cards I made with the same sort of information. This list covers items, I don't already have like grains and a few others. When the Pandemic first hit, I looked up a lot of things and made some reference cards and they come in very handy. If you don't use it, you forget how long ago it was purchased and open. Food safety is important and I have also started dating things in the fridge when I open them so I can keep track of everything. |

Took the 3 girls to pick cherries this morning. They picked 6lbs for their mom. She only wanted 2 pails full and our containers held 16 lbs. So we ended up with 22 lbs. I have washed pitted and froze almost all of them. Kept out some to make cobbler. They did a good job once we explained which ones were ripe. They are so sweet and juicy.

They are a lot of fun and all different personalities too. The oldest more quiet. The next oldest a chatterbox and little one smart as can be but with a little of her Mimi's sass. Lol! |

I love the artwork and the recipe looks very similar to any basic biscuit. For the past few years, I have been making buttermilk biscuits from MaryJane's Cast Iron Cookbook and I promise you they are fool proof. Perfect every time.
The most recent MJF magazine had an article about how to roast your own coffee beans. I just had to try it out so I ordered some green beans on line and today I tried toasting 1/2 cup of them. They have to sit and air out for 24 hours before you use them so they are "resting" in a colander as suggested. I will try them out tomorrow and see what happens. I fully expect to have to work on this process to actually do a decent roasting job. But it sounded like fun and I am curious about how to do it, so here I go. My grandmother used to roast her beans in cast iron skillet and then grind them each morning for making coffee. I have her old coffee grinder and my Mom's old cast iron skillet to roast the beans in. I will report back on how it all goes. |

Have been thinking about roasting some Winnie. Our Pastor was telling us he does his own. We have ground our own but never roasted them yet. |

I love pickled beets. Don't know how to do them though.
I threw some ribs and sauce in the crockpot yesterday and made a macaroni salad. Tonight it is grilled chicken on green salad. |

My dehydrator is steady running right now. I have salsa, celery, chopped hot peppers, bell pepper strips, leeks, rosemary, sage, and thyme in there. Dinner will be Thai crab cakes with a Thai steak salad. |

Well, my first effort at roasting coffee beans was a flop!! LOL!! I need to roast them longer so they get darker. I didn't use but a small amount to test so no harm done. What I am thinking now is that this is a much harder task than I imagined and I have some ideas for the next batch to try. I am wondering if I had the flame up too fast and then had to turn it back quickly so as not to burn. I think next time, I will start with a lower flame and it will take longer but that might give me a better result. |
