Does anyone else struggle with trying to plan dinner??? I read something funny the other day that said, "I didn't know that the hardest part of being an adult would be planning 3 meals a day for the rest of my life!"
I like to cook but just run out of ideas! I ask Brad to give me an idea but he's as bad as I am!

Marilyn, I'm hoping that you can help me! I remember that you shared a recipe quite awhile back for a salad that had iceberg lettuce, ranch beans, maybe some Catalina dressing and possibly some crushed fritos??? I remember making it and it was SO GOOD!! Just can't find the recipe now. I went back into the Kitchen thread to look for it and couldn't find it either.

Ooooh yes Debbie, our Texas Frito Salad !
We take ripped up iceberg lettuce, drained ranch beans, shredded cheddar cheese, diced fresh tomatoes, crush up Fritos, and Catalina dressing on top ! Mmmm mmmm good !!!

We go through the same darn thing Debbie and I start asking early in the day so I can set something out from the freezer. But, if no one can come up with anything we have breakfast! Yummy.

Debbie, as best I remember you are on the right track.
MEXICAN SALAD
One HEAD of iceberg lettuce, chopped in bite sized pieces
One large or two smaller tomatoes, chopped
One purple onion, chopped
I can Ranch Style Beans, drained and rinsed
One 8oz. Bag of cheddar cheese shreds
Fritos crumbled up
Catalina Dressing

NOTES: IF YOU ARE MAKING SALAD FOR A BUNCH ... USE EVERYTHING.
IF MAKING SALAD FOR ONLY TWO Then use less of everything.
You can use the extra beans as a side dish. In this case open the can and remove two or three Table spoons of beans to use in your salad. ( the beans you use as a side dish will have all of the flavor of the juices.)
If you want you can put the salad together in layers...but do not put the cheese, FRITOS or dressing on the salad until you are ready to serve it.
When I first made this salad, we cubed our cheese. Because grated cheese was not available. 1970. You probably will not need the whole
head of lettuce.

This is a great recipe to take to pot luck dinners. Just layer, like I said. Wrap with saran wrap. Then lay a bag of cheese, a bag of fritos and a bottle of catalina on top. Also instead of regular fritos try Chile flavored Fritos. Yum.

When I don't know what to fix I make a burger concoction. Every one is different. I brown some burger then add what I have or what sounds good. Sometimes it's easy like a can of shredded zucchini, a can of green beans, and a can of peas (all drained) once it's all warned up I add some Shirley sauce (a recipe I found for all those tomatoes in the garden - it's sort of flavored like spaghetti sauce but just a bit thicker than tomato juice). Sometimes a concoction is burger and mixed frozen veggies fried up then when it's just about done I add a can of condensed soup - like cheddar cheese or cream of potato (don't dilute it).
