So I was wondering what everyone's plans are for this Sunday - which is our annual apple pie Sunday! Does everyone have their apple recipes ready? Having friends over to join?

We're going apple picking today. I think this weekend I'll make my apple themed dinner, probably on Sunday. I'll probably make apple crisp also. I'm going to be storing most of my apples so that we have them through the winter. We did that last year and it worked out so well. We didn't have to buy any until April or May, if I remember right.

Joyce - here is Winnie's post from this year http://www.maryjanesfarm.org/snitz/topic.asp?TOPIC_ID=87144 Apple Pie Sunday is the last Sunday of September... After that we seem to move into all things pumpkin :)

Erin - how did you store your apples? I would love to make them last for longer! Generally we just can or dehydrate them... I did buy a bushel just to eat though, so hopefully they will last awhile!

I still haven't decided what we are going to do. Decisions decisions decisions!

I really do not like Apple Pie, I know very unAmerican:-) I never have, then 6 years ago when I found out I was allergic to wheat and gluten I also quit making it for my guys. So to honor May Janes Apple Pie Sunday I will take my guys into town to Grandmas House and buy them a hot piece of apple pie with ice on top.

Would have to make the crust or cobbler with gluten free flour which I have done before. I really am a cake girl :-) Guess I could make an Apple Cake.

Shannon, I have a big Rubbermaid tote that I fill and keep in the basement. I wash all the apples, leave them overnight to dry, and wrap them with packing paper individually, then fill the tote. Our basement isn't finished. It's kind of a scary basement that I don't like visiting, but it's cold in the winter like a root cellar would be, so it works out for storing apples and wine. I just give Jason a bowl to fill up when I get low and he goes down and gets them for me.

We got about a bushel and a half yesterday- mostly Cortland but some Jonathan. I'm going to store some Cortland, and make apple butter and apple pie filling from the Jonathan. I want to use MJ's recipe for apple pie filling but I'm hesitating because I don't really want 7 pints of it. I guess it will keep for a while right? It's not like I'd have to use them all within a year. Do you know how much is needed for one pie?

We are fortunate enough to have a "cold storage room" that is insulated from the house, in the basement. The guy who built it, did so for filling his ammunition. That is where I keep my canned goods... I may have to try to put some apples down there and see if they will last!

Erin - I THINK one quart of pie filling will fill a pie! I almost always have to make two pies, so I use three quarts for the two pies, but for some reason when I can it, I always have too much sauce and not enough apples, hence why I use 1.5 quarts per pie... I try to can enough for the year.... but we also often share our canned goods, especially with my parents.

I agree with Shannon, Erin. It seems like you have enough sauce but a little short on the apples. About 4 cups will fill a pie. It should keep for quite awhile if you can it.

Ok thanks! I think I'm going to try it. Do you use Mary Jane's recipe or a different one? I made apple crisp last night for Jason's birthday. We had some people over, and they all loved it.

Erin - I generally use Mary Jane's recipe.

So what did everyone end up doing? I found an apple spice cake recipe that I was going to use... but I am out of sugar!?!? So I guess I will have it tomorrow or some point this week anyways. We did have a brined and stuffed pork loin, that was DELICIOUS, applesauce, brussel sprouts with bacon and apples. The stuffing for the pork loin was apples, spinach, walnuts, and goat cheese. So so good!!!

Yesterday ended up being kind of a weird day. Jason took the older kids with him to a park where he was meeting a friend to play tennis. They ended up stopping on the way home for dinner. I didn't make anything yesterday because we had so many leftovers. I'll have to do the apple theme dinner this week sometime. That pork sounds really awesome Shannon. I'm not sure what I'm going to do for a main course yet.

So I made the apple pie filling on Monday. I followed the recipe from MJ's ideabook and you guys, it was way too many apples! I had so many left over. Is this common knowledge that I wasn't aware of? Did they have to issue a correction for that recipe? 18 pounds was way too much. So I canned my seven quarts, and I tested the lids after leaving them overnight, and they appear to be sealed but I'm really worried that it didn't work right. I got rid of air bubbles, and filled to within 1/2 inch as per directions, but it appears to have just expanded right up to the lid and now I see air all over. *sigh* This is why I stick to jams and diced tomatoes! I have leftover apple pie filling that wouldn't fit in the 7 quart jars and I looked up some recipes for that (other than pie) because I need to use it. I probably won't attempt to use the canned filling until Thanksgiving, so that will be fingers crossed, smell test and hardcore inspection, because I'm skeptical. I had 2 big bowls (in water and lemon juice) of apples left. One of them I used to make overnight crock pot apple butter. I still have one that I'll have to use today.

I HAVE to use today. Yesterday our fridge stopped working! I have coolers all over our kitchen holding things right now. :(

I almost always have a little bit of air bubbles in my pie filling. I almost always have extra of whatever I am canning as well. I usually just can another batch, lol. My kids enjoy using the apple pie filling in oatmeal, lol. We also use it for crisps and cobblers... If it is plain apples still, you could make applesauce, or put them in a dehydrator and dry them.

Erin, I looked at the recipe that I have and the one in MJ's book and the one thing that was different was the amount of apples. Mine called for 7 qts. of sliced apples and hers was 18 lb. I wondered, too, if maybe there was a typo...or maybe it cooked down and had more apples-to-sauce ratio.
Just what you don't need right now....a broken down fridge!!!

I know Debbie! So frustrating! I'm telling you girls, we have a Samsung fridge and washing machine that we got new when we moved in here a little over 5 years ago. Fridge just stopped working and the washer leaks.

I used the rest of the apples that I had sliced this morning for a different crock pot apple butter recipe. This one does have sugar and honey. I found some recipes for apple butter bread, so I'll probably make that and freeze it.
