Hotties, for the month of August we are going to focus on recipes for hot weather. Please post your favorite recipe to fix on these blazing hot days we have in the month of August in Texas. It can be a salad recipe, a fruit recipe, a pie recipe, a icebox cake recipe, or anything you like to fix to cool things down!

Cold Corn Salad

2 cans corn, drained
2 green onions, chopped
1 large bell pepper, chopped
1/2 cup celery, chopped
Black pepper to taste
2 tomatoes, chopped
Enough Mayonnaise to hold the salad together

Combine corn, green onions, bell pepper,celery. Mix in enough mayonnaise to hold it all together. Chill, and just before serving, add the chopped tomatoes.

Serves 4 to 6 people

1 can Garbanzo beans, drained.
1 can black olives, sliced and drained
1/2 cup of Feta cheese- chunky
1 can artichoke hearts, cut into bite pieces- drained
tomato- chopped into bite size pieces
A chunk of hard salami, cut into bite size pieces


Salt and pepper to taste
1 glove crushed garlic
olive oil and vinegar, to your own taste
Parsley

Fresh crusty bread to mop up the goodness.

Tastes best if you mix and let sit in the fridge. Add the cheese right before serving.

Tomato Salad

Tomatoes
miracle whip (or ranch dressing)
mozzarella cheese
salt and pepper

Slice tomatoes and place on a plate covering the plate.
Salt and pepper the tomatoes to taste.
Spread the miracle whip or dressing on the tomatoes.
Top with cheese.

Refrigerate for a couple of hours. Enjoy!
