I forgot to say I also bought 8 ears of corn on sale for $2 - will husk and take corn off the cob for corncob broth and give the corn to one of my sisters. Corn is hard for me to digest so I like to flavor soup with the broth.

Been in my Yellow Rose Cottage since 4a.m. Have zucchini drying in the dehydrator; chicken thighs/veggies in crockpot for broth to can in the morning; green bell peppers and onions on hot plate and when ready will pressure can.

When the chicken broth is made I will start corncob broth in crockpot for another day of canning.

Sara, we dried (dehydrator) zucchini a couple of years ago and didn't like the texture when I cooked them. What do you use them for? How do you process them?

Hi Carole, I put a handful or two in soups or stews. Like you I do not like the texture for a side dish but do like dried zucchini or yellow squash in soup.

I wash, dry, use veg peeler to take off the peel every inch or so lengthwise, slice, and single layer on dehydrator tray.

I finished up the zucchini this morning and now have button mushrooms in dehydrator.

Thanks Sara. Perhaps I should give it another try and use them in soups.

Yesterday, I made my annual batch of bread and butter pickles using my Mom's recipe. It has been a family favorite since my childhood. Thanks to my oldest daughter, their family garden had an abundance of cucumbers and I was the lucky recipient of a nice big bag. Both my girls and a brother and sister have already requested a jar!

Winnie, Beautiful jars of pickles.

I was given two large yellow squash yesterday. May slice and fry one dusted with cornmeal. The other - can't decide between cornbread squash casserole or squash & tomatoes.

I make cornbread dressing and cook with large diced squash and extra onions. Also good with eggplant.

I tried those crock pot ribs again. They came out great! I used a different dry BB-Q rub this time and they came out of the crock pot crispy! I didn't have to put them under the broiler! You just throw them in the Crock Pot, don't add any liquid, stand them up around the pot. Cook on high 3-4 hours.

The other day we were talking about yellow squash casserole. I took a dozen of my sister's eggs to one of my neighbors and she gave me a serving of her yellow squash casserole made with Stovetop Cornbread Dressing. Haven't eaten it yet but I know it will be tasty. Her recipe calls for a can of cream of chicken soup, onion, and bell pepper. I never got around to making the squash casserole - I roasted both of the squash with other veggies.

Fresh field peas are so good. My how time flies to think that picture was taken 2 years ago. That must mean Lily June is 4 now and have more aprons to wear.

During the summer months I try not to use my oven much. This morning I did cook a whole box of Old Folks sausage patties - they are now in the freezer to flash freeze. I can micro-wave one or two patties when I want sausage. I wasn't going to buy anymore sausage until cooler weather because I like my sausage cooked in the oven but I had a in store $1 off coupon just for this month.

I just finished my Fruit Pizza for our neighborhood picnic this afternoon. It is super easy to make: one roll of sugar cookie dough, 8 ounces of softened cream cheese, fresh fruit of your choice and a small jar of your favorite jelly to provide a glaze.
I push out the cookie dough on my baking sheet into a rectangle like you do for making a homemade pizza, keeping it about slightly thicker than a regular cookie would be. It is easier to handle if the crust is slightly thicker. Bake until lightly brown and crisp. Cool. Spread the softened cream cheese over the cookie like you would tomato sauce on a pizza. Next, add the fruits of your choice. Last of all, take a small jar of jelly, melt on stove and cool. Then spoon the cooled jelly over all the fruit to give it a nice glaze. Put the entire thing back in the fridge for about an hour before serving. I cut it into squares like a pan of brownies so it is easier for people to get a piece from the pan.
