I seem to always have vodka in the kitchen for vanilla... but the idea of wiping off mold just does not excite me!!!

Sara, when I made my first batch of vanilla, my husband went to buy my vodka. The lady told him to buy the cheapest. She said she used it to make her own vanilla. Now Sara, tell me this...do you order your vanilla beans from Beanilla or another company?

From Beanilla. I have gotten it from the San Francisco Herb Co. I hadn't heard about the cheapest vodka for vanilla flavoring. I think I bought a middle of the road bottle. I also use vodka to make orange liquor. Haven't made it for awhile and may to so when blood oranges are in season and go on sale. I like orange liquor in sweet/sour dishes.

Can't wait to try the Lemon Seeds for pectin in my jams this summer. I make jam without any sugar at all. Just the fruit. Been using apples for pectin, but the lemon seeds appear like they would help. Checked out the website posted by YellowRose thekitchn.com. Great site! Thanks for sharing.

Brenda, I've been saving lemon seeds but the quart freezer bags with them keeps getting lost in the freezer. I need to make room on the door and put them in a freezer jar.

This week will be busy in my kitchen.

Today: I am drying celery to add with herbs & spices to dried chilies I bought to make my own chili powder.

This morning I prepped veg for the week - green onions & leeks

Later I will prep for cantaloupe jam and watermelon rind pickles. Bought a personal size watermelon - the cantaloupe is bigger - so the rind shouldn't be too hard to do. Will start canning in the morning so I will fill my electric water bath canner today.

On Life of a Chef on PBS Vivian made watermelon rind pickles and took the green part of the rind off with a veg peeler. Made it look so easy so I will try it. She cut the rind into biscuit size pieces because the woman who taught her to make them make hers to go on biscuit and sausage. Doesn't that sound so yummy.

I will use the red part of the watermelon as she did on the show. Country style pork ribs with red curry paste and watermelon. I will make it sometime this week. I dearly love a good watermelon so I hope a get a slice out of it.

Update on watermelon rind pickles: The veg peeler did not work for me so I used a knife. My peeler is a different design from the one used on the show. Theirs was more like a cheese slicer and a little larger.

One other interesting thing I learned from the watermelon farmer Vivian visited. To grow seedless watermelons the farmers still have to grow some with seeds to pollinate the ones without. Man may improve on God's work but will always need the original to make it work.

All prepping done - rinds have been salted, topped with ice, and in fridge until tomorrow. Cantaloupe chopped and in fridge. Will measure out all ingredients today for tomorrow.

Cantaloupe rinds with seeds/juice is outside for the butterflies.

I have not eaten watermelon rind pickles since I was a big kid. My grandma made them from Black Diamond watermelon rinds. They were YUM.
Grandma made hers in sticks and stood them in the jars. Are you also going to can some tiny green mustang grapes, like Grandma did? It takes a lot of sugar to sweeten them but she always canned a few for Green grape pies.

The first seven years of my live I lived on a watermelon farm and Daddy grew black diamonds. Back then they were the going thing. Don't see them much around here anymore. A couple of years ago a truckload of black diamond watermelons out of Arkansas came to our farmer's market. They sold out by the day's end.

Haven't seen a mustang grape in years. They grew wild on the watermelon farm and mother made jelly but only out of the ripe ones. We also had wild persimmon and plum trees. I remember biting into an un-ripe persimmon and how my mouth & cheeks puckered.

Never heard of eating grape leaves until I was grown and bought them from a Dallas deli stuffed with spiced rice.

Persimmons are only good after a frost. We had a tree, but it died. I used to take the seeds to school to open with the kids and see what kind of weather our winter would have. I have made a lot of mustang grape jelly in my life.
I have an issue with the fuzz on okra and grape stems. I itch for hours after picking. Not a pleasant experience.

Years (20 or more) ago I found an okra without the fuzz, few seeds, and little slime. I got the seeds from an heirloom southwest seed company. I have since forgotten the name. I do remember they found the okra growing on a south Texas farm. I should have saved the seeds but I didn't.

I would go out at noon and pick just enough to make fried okra for my lunch. Best okra I ever had.

My dehydrator is humming... full of veggies from the Fire Tonic, mullein we harvested, and habanero and thai chilies that we are not going to eat quick enough :)

Shannon like you one of my favorite things to dry are veg I haven't gotten around to using. How are you going to use the veg from fire tonic?

Started canning cantaloupe jam at 6 this morning and finished watermelon rind pickles by 8:30. Cottage is cleaned and dishes washed. All left to do is drain the canner tomorrow.

All lids sealed and I think the jars look pretty.

Today, tomorrow, and to it's done I'll be drying Texas 1015 sweet onions.

A couple of batches of chili powder.

Start prepping dried cayenne peppers for red pepper flakes without seeds.
