I feel like I've been neglecting the hen house....I am so sorry to all. Its the end of the school year here and its been crzy. Have also been trying to get 20 people hired to start a training on the 1st of June!

I think this recipe post will be great. When I get home I'll did a few out.

You will need:
A large crockpot
1 44oz can of Pork & Beans
1 14oz can of Black Beans
1 can of Dark Red Kidney Beans
1 can Great Northern Beans
2 cans of Butter Beans
1 cup Ketchup
2 TBSP Yeller Mustard
1 TBSP Vinegar
1/2 cup Brown Sugar (I make mine heavy)

1 lb. cooked bacon crumbled
1 lb. browned drained ground chuck

Dump all the goodies in the crockpot and cook on low most the day. We like to top it off with some shredded cheddar, or sometimes a glob of sour cream! It feeds a lot (about 16) if your not big eaters and freezes like a dream!


This is not mine it is another Farm girls Deere Dawn but I love it.

Hi Farmgirls,
Don't know if you've tried Mary Janes ChillOver Powder . . . but I love it!!! It is easy to use and you can be really creative with it.
Here are some recipes that I came up with using the powder:

PEACH SPICE DESSERT: used homegrown and home canned peaches
- 4 cups peaches (if using canned, use the juice too) pureed in food processer with 2 tblsp. brown sugar and 1 tsp cinnamon
- 2 tsp. ChillOver powder

Place 2 cups of pureed peaches in saucepan, sprinkle powder over and cook according to pkg. directions.
Stir in remaining peach puree, pour into dish and allow to set up.
Serve with whipped topping and orange peel zest.

VERY BERRY PARFAIT: using homegrown berries, frozen.
- 2 cups mixed berries
- 2 cups red raspberries
- 1/3 cup brown sugar
- 1/3 cup raspberry syrup (homemade and given to me by a MJF Farmgirl)
Puree all in food processor and place 2 cups of mixture in saucepan,
sprinkle 2 tsp. ChillOver Powder over and prepare according to pkg. directions.
Stir in remaining puree and allow to set.
Layer berry chillover in parfait dishes with chopped walnuts, whipped topping and drizzles of the raspberry syrup.

NOTE: If raspberry syrup not available, increase brown sugar to 2/3 cup and the parfaits could be drizzled with chocolate syrup.

BUTTERSCOTCH CRUNCH:
- 1/3 cup water
- 1 tsp. ChillOver Powder
- 1/4 tsp. salt
- 1 cup butterscotch chips
- 1/4 c. sour cream
- 1/2 tsp. vanilla
- 1 c. heavy whipping cream
Combine in saucepan and prepare according to chillover pkt. directions.
Stir in 1 cup butterscotch chips and stir until melted, add 1/2 tsp. vanilla flavoring and 1/4 c. sour cream. Stir until well blended and set aside.
Beat whipping cream until soft peaks form and fold in butterscotch mixture. Allow to set.

CRUNCH TOPPING: In saucepan combine 2 tblsp. butter, 1/3 c. brown sugar, 1/2 c. old-fashioned oats, 1/2 tsp. cinnamon and 1/2 c. chopped nuts. Stir and cook until starting to caramelize, pour onto plate, allow to cool. Break into crumbly crunchy topping.

Top with whipped topping and crunch topping as desired!

Hi,

Ethnic cooking has always been one of my passions. Being Norwegian, I grew up doing quite a bit of Scandinavian cooking.

Here's a recipe for Midsummer Night's Dream

3 eggs
3/4 cup sugar
1 cup flour

1 teaspoon baking powder
1/4 cup almonds, chopped
Sugar for sprinkling on top
2 cups strawberries -- mashed and sweetened

More strawberries and whipped cream for garnish.

Preheat oven to 45 degrees. Line a 12 x 15 baking tin with parchment paper. Beat eggs and sugar together until light and fluffy. Mix flour, baking powder and chopped almonds together, fold carefully into the sugar and egg mixture. Spread batter in the baking pan. Bake for about 5 minutes. Remove from oven. Sprinkle sugar onto the warm finished cake and carefully turn it over onto a second sheet of parchment paper, sugared side down. Remove top sheet of parchment paper. If it won't loosen easily, brush with a little cold water.

Filling and assembly: Stir sugar into the mashed strawberries; spread mixture onto the cake. Roll up the cake from the long side and allow it to cool for several hours before serving. Cut into 1-inch thick slices to serve. Garnish with whipped cream and sliced strawberries. Serves 10

Here's a summer salad that is a hit at any family gathering I bring it too.

Meatless Taco Salad

1 bag coleslaw mix Green onions, chopped
4 oz. shredded cheddar cheese Ranch Cooler Doritos, crushed
Tomatoes, cut up Western dressing

Toss all together and mix in dressing to desired consistency.
Add the crushed chips just before serving.
Can add meat for traditional taco salad.


People will not know that this is made with a coleslaw mix. Enjoy!

Like guacamole...try this recipe:

2-3 ripe avocados, mashed
1 ripe roma tomato, chopped
1/2 small onion, diced
1 teaspoon diced garlic
1 teaspoon salt
1 tablespoon lime juice

Peel and mash avocados in bowl.
Add onion, garlic, salt, and lime juice.
Mix completely, cover, and chill at least 1 hour. (Let the flavors blend)
And enjoy!

I love simple easy recipes. One that I have used often when I needed a quick dessert when company was coming is for peanut butter cookies.
1 cup of Peanut Butter
1 cup of sugar
1 egg
1 tsp of vanilla
mix all together spoon onto cookie sheet and bake @350 for about 10-15 min.

This is a HUGE favorite in our house. My husband concocted it!

Jim's Burritos
(makes about 5 medium burritos - feeds 2 guys & me)
Peel & cook up (like making up mashed potatoes) 2 yams.
Brown a pound of ground beef with Mexican/taco seasoning.
Chop up the following & throw in and cook up with ground beef:
jalapenos
garlic
onion
green bell pepper
yellow squash
tomatoes

Spread some mashed yams on a tortilla, cover with grated cheese, add beef mixture, cover with salsa and sour cream, and enjoy! Sometimes, I eat this as a chip dip with tortilla chips instead of tortillas.

CJ, I was looking over this thread and saw your recipes with Chillover Powder. Do you know if there's corn or wheat in the powder? I sent an email to find out and never got an answer. I'm trying to avoid those products but want to use it to try and make almond milk yogurt.

Robin, I like the sounds of your burrito recipe. I may have to try it.

Recently the BF and I made a rhubarb crisp.

Rhubarb, cranberries, and apples in the bottom of a dish. I'll have to find the topping recipe as it is at his house and I modified it so I could eat it using almond meal and buckwheat flour. It was great.

Hi Fellow Chicks:
Sorry I haven't responded sooner - been busy canning Orange Marmalade. If anyone wants the recipe let me know - Anyway here is a simple dish that hubby and I love.
In a frypan - saute:
1 TBLS Butter
1 TBLS oil
Add 2 chicken breasts and brown on both sides - reduce heat and let simmer until cooked through. Remove from pan.
Add 2 tsp. Grey Poupon to pan drippings
Add 1 container whipping cream and LOTS of Tarragon (my favorite seasoning)
Cook until thick and use as a gravy over chicken. YUMMMMMMMY

The ingredients list on the back of the ChillOver Powder package says this:
"Kanten (agar agar), an odorless powdered sea vegetable with superior gelling qualities".

I didn't think it was anything but that but wanted to look at the package.
I bought the 1/4 lb. pkg. and while it may seem kinda pricey it goes a VERY, VERY LONG WAYS because you only use 1 tsp. per recipe.

I REALLY LIKE IT!!!

Here is a recipe I hope you enjoy it.

5 Minute Chocolate Cake

4 TBLS Sugar 3 TBLS OIL
2 TBLS Cocoa 3 TBLS Choc Chops
1 EGG Splash of Vanilla
2 TBLS Milk 1 Large Coffee Mug

Add dry ingredients to mug and mix well. Add egg and mix thoroughly. Pour in milk and oil, mix
well. Add Chocolate Chips and vanilla, mix well. Put mug in microwave and cook 3 minutes at 1000 watts. The cake will rise over the top of the mug, but don't be alarmed. Allow to cool a little, and tip onto a plate if desired. Eat! It can serve 2 if you want to share. And why is this the most dangerous cake recipe in the world? Because now we are only 5 minutes away from chocolate Cake at any time day or night:-)
