I can finally harvest some of my rhubarb this year and I would really like to make some jelly out of it. What kind of rhubarb jelly do you make? Is it strictly just strawberry rhubarb? Or has anyone else tried another good combination?

My favorite is rhubarb jam. Super easy. 5 cups of finely chopped rhubarb, 3-4 cups of sugar, and one box of cherry or stawberry jello. Mix rhubarb and sugar and let sit to juice forms. Bring to boil, boil till rhubarb falls apart about 10 min. Remove from heat add jello, and stir till dissolves. Can or freeze it. I see there is another recipe where you do the same thing but add undrained crushed pineapple. Cook 20 min.

Michele, it turned out great! My kids love it and can't stop eating it! My rhubarb plant is still on the smaller side and I was afraid of taking to many pieces so I ended up with 3 cups rhubarb and then did the other 2 cups of Strawberries. Thank you so much for sharing. I ended up with this whole jar and some extra I put into another container. Well... the other container is already gone and some of this jar too lol!

Yesterday I made 6 pints of rhubarb syrup with some rhubarb from my dad. It tastes delicious. I think I have a new addiction!

I will do that next time I make some jam. I am pretty new to canning so it's a learning curve for me.

Thank you Karen! They both are delicious. I have a little bit of rhubarb left so I am going to make some rhubarb muffins. I am trying all these wonderful things with rhubarb to see what I like best!! And remembering them for next year.
