I harvested herbs earlier to make herbal vinegars later today. Mexican marigold "Texas tarragon" will go in white wine vinegar for tarragon vinegar. Chives, lavender, Syrian & Greek oregano, rosemary, and lemon thyme in organic apple cider vinegar for a mix vinegar.
Recipe
Wash & dry herbs Heat vinegar to boiling but don't boil
Put herbs in mason jar; at this time you may add peppercorns, garlic, hot peppers, etc.; cover with hot vinegar; tighten lid. Place in cool place with no direct light for 2 weeks.
Strain and put vinegar in pretty jars. If the herbs still look good all or some can be added back to the jar if desired or add new ones.
The woody herbs like rosemary & thyme hold up good and may be left in vinegars, but leafy herbs like basil do not so they are discarded.
Garlic may turn blue but that's okay it's a natural reaction and the garlic is still good. Info from my canning books.

Hi Deb, I use them in soups, stews, barbecue sauces, and meat marinades. A tablespoon more or less of any vinegar will bring flavors togethers.

I make basil vinegar for all kinds of salads. Except fruit salad, but I haven't tried that yet so who knows....
