Are there any vegetarian farmgirls amongst us? If so, what are some of your favorite meals?

I have been vegetarian for thirty plus years, because meats were to greasy for me and caused terrible upset stomach that would keep me up at night. My girls were raised vegetarians and my husband is an occasionally meat eater. We enjoy trying new recipes and I hope this might be a new useful forum.

I try very hard to be a pescatarian because I love fish and live in the PNW, where fish is abundant. I recently found out that I have an egg allergy so eggs are now off my menu, and I also discovered that I have a moderate allergy to cow's milk products. Add to that that I'm mildly diabetic and I try to also each kosher. All that together means that I should probably just be vegan and be done with it, but I struggle to make dinner "exciting." My husband is a hardcore steak and potatoes kind of man, which makes it a struggle to feed us both without breaking the bank. I'd LOVE to discover more vegetarian/vegan dishes besides what I have in cookbooks. I'm trying to capture that home cooked, comfort food feel with this type of food and, so far, I'm not doing a very good job! I'd love to discover what kind of dishes have served your family well over the years. Thanks for starting this thread!

I'm not a strict vegetarian but I do have several days out of the week without meat or dairy. I follow the everything in moderation way of eating unless I am allergic to it like sea food and most fish.

I am interested in vegetarian recipes and learning from FarmGirls who are vegetarians.

Hi Jana
I am the same as Sara. I try to use burger crumbles instead of meat when I can. I only eat chicken and fish but I prefer a veggie diet for your same rwasons.

I have a square skillet and a round skillet. When I make tacos or such I can keep track eastier making two version. Hubby = "must eat meat, must eat meat"!

I am definitely not vegetarian, although I am mostly Paleo. Would like to follow more of a vegetarian lifestyle, but cannot tolerate any form of soy.
So I stick to local meats, and mostly local organic vege and fruits. No refined sugars or gluten here.
What do vegans eat that cannot tolerate soy?? So many of the recipes rely on some form of soy. I do not trust soy.

Lisa - is it just soy beans or all legumes. I just saw on Pinterest a tofu alternative made of chickpeas. I have found that I need to eat nuts or nut products sparingly or it reeks havoc on my stomach. I could so easily be vegan but there are no good substitutes for eggs and or cheese in recipes.

Rachel and Nancy I can so sympathize with you both having a meat and potato husband, it has taken years of creative cooking to get my husband to eat what we are eating which is based on a lot of veggies and every now and then I have to add a chicken breast or steak to his plate to keep him happy.

There is protein in all foods that we eat, the key for vegetarians is getting complete proteins by combining grains and protein alternatives.

Jana, I can eat other legumes, but probably only a couple of times a week. And BOO!! although we have 21 chickens, I have become sensitive to eggs. I am quite hardy, and can eat spicy foods, mucho fermented foods, vege fruit and meats. I guess all in all, we (hubs and I) are doing OK. But I do think about becoming vegetarian now and again. Then I make a burger from our local beef and out the window it goes!!

Jana, we eat some ground turkey, salmon, but, mostly vegetarian.
Our fave recipe is Wild Rice Burgers...I'll find the recipe and send it here.

The older I get the more I read about food and I don't like what I am learning about processed foods, hormones, flavoring and GMO. It is an easy decision to be an organic/non-gmo vegetarian and at times vegan!

This is why we raise all our own meats and grains, along with fruits and vegetables. I go to the grocery store once every three months. We make just about everything from scratch, Including our cheese and yogurt, ice cream etc.
