Awesome job, Sara! Last night I cut up a multi pack of colored bell peppers into slices and frozen them. Also sliced up several onions from the pantry and did the same. I'll use those to make Oven Chicken Fajitas! :)

Freezers have a lot of space free right now. Focusing on eating them down more before my next trip to the butcher to stock up on meats for over the warmer months.

Jaime you are so on the money about getting your freezer ready for the next big thing. Whether it's having a full pantry or freezer you have to manage it to get the benefits of having one. Rotate in - rotate out.

Peg - Nice list!

Even though I am not doing freezer cooking of whole meals a lot right now I do regularly freeze the following:

- Chicken Stock
- Ice Cubes of Lemon and Lime Juice
- Lemon and Lime Rinds (can use microplane grater on frozen rinds for zest)
- Heads of garlic (I break off what I need and after sitting on counter a few minutes you can slice off the end where it meets the head and squeeze the rest and the clove will slide right out! Ready to mince, etc.)
- Cooked, shredded chicken
- Browned ground beef
- Sliced fresh mushrooms
- Sliced green peppers
- Leftovers from opening a can for a recipe (Most often this is part of a can of green chiles, or maybe leftover tomato paste)
- Milk (pre-measured in amounts I know I will use for common recipes - I'll do this when I have milk coming up on best use by date and I know I won't get to it all in time)

Jaime, I never thought about freezing garlic - always dried it. Have some extra so I will give it a try. How do you freeze yours?

I love learning from other FarmGirls!

I love freezing garlic!!! I peel it and throw it in a bag. If I need some minced, I just pull it out frozen and mince it that way!

I tend freeze primarily fruits, though I also dehydrate and can some.

Any time I peel carrots, have celery ends, herb ends, or veggies that aren't looking like they are in their prime, I throw them in a bag in the freezer. Then when I am about to make stock, I through them in... or I just make veggie stock.

Today I am working on rendering down deer fat and will freeze it in ice cube trays, then popping those out into a bag so I can easily grab a cube (which equivocates to about 2 T) and use it to cook.

I don't even bother peeling mine first, I just put the whole heads in a small ziploc freezer bag. The paper peels off easily and allows me to break off the number of cloves I need for a recipe. As described above, after thawing I cut off one end and the whole clove slides right out. No hassle with trying to peel off the skin like with fresh garlic!
