Sara, I don't know. It's my first time doing it. I did it the same way I do pickled asparagus, minus the vinegar of course. Several cloves of garlic, dill weed, and crushed red pepper added to the brine.

To up-date an old adage "FarmGirl see - FarmGirl do. Lisa I found a pound of asparagus in the marked down bin so I started a qt jar with red onion, garlic, rosemary, and spring water. Hope I like it because I'll be eating it for a long time.

This morning I started my first ever sourdough Mother so I'm excited about that. Happy to see my counter top filling up with jars of this and bowls of that.

On Amazon I found and ordered 4 glass fermenting weights for wide mouth mason jars. They came yesterday and I washed them and will use one to make a quart of sauerkraut today. They gave their website in the box www.soligt.net

I visited their website and printed 7 recipes which included cherry tomatoes and cinnamon apples. They sell their products only on Amazon.

They also sell lids to go with the weights but I think I can manage with what I have. If I change my mind I will order the lids.

Two days ago I started a quart jar of sauerkraut with the glass weights. The weights are working and the sauerkraut is perking away. I think the Ball lids and rings will work okay - no need for special lid - will let you know if I change my mind.

Nothing is fermenting but I am eating sauerkraut every day for lunch and I hate to say I am munching on a big jar of dollar store dill pickles. So good.

Funny I just started a batch of sauerkraut last weekend! I love those glass weights and I agree with Sara, the Ball lids just placed on top at a slant works great for letting the gas out while keeping anything from fall in.

Haven't started yet, but once we finish the seedless watermelon I bought, I am going to try fermenting watermelon rind. Will go for spicy, which is my go to flavor.
Will keep you posted.
Barbara, there are some sweet and hot dollar store pickles that I love!!! Unfortunately, I saw they are from India????? I still bought another jar, I couldn't resist, but isn't there someone in the US that could do this?? (sadly, probably not as cheaply). But man, they are GOOD!

Speaking of pickles my first job out of high school was payroll clerk and cucumber inventory clerk at a pickle factory at Love Field air port in Dallas. In those days there were small factories around Love Field. The pickle factory has been gone for years but there must be other ones around the country.

My sauerkraut will be ready soon. Lisa keep us posted on fermenting the watermelon rinds. I've made preserves out of them so fermenting should work. The hardest part is taking off the green.

Jill, Amazon can't ship the weights to BC so I had them sent it to me and I will mail to you. They're get to you it will just take a little longer.

I have a neighbor who gets food from the Food Pantry and she goes right before they close the day they are giving out food. They will give her as much of the fresh produce she wants and to share with me. This time she brought over two plastic grocery bags full of small bok choy and one over ripe pineapple. The bok choy's leaves were yellow and only the inner core still good. So sad there is so much fresh produce left at the end of the day that no one wanted. Don't know if they just don't know how to prepare some of it or if less people are cooking from scratch.

Making pineapple vinegar out of pineapple. Don't have a recipe so using MJF apple cider recipe.

Used part of the bok choy to make a quart of kraut. Seasoned with celery seeds and dried Greek oregano. Used both the green and white part so it's a pretty kraut.

The bok choy kraut is coming along nicely and is so good. Now I wish I had made another quart of it.

The pineapple vinegar smells really good but I'm not sure I will know when it's ready to decant and put in a pretty bottle. Gotta look through my fermenting books and see if I can figure it out.

Have apples in slow cooker for apple sauce so started a batch of ACV with peels, stems, and cores. First time to use glass weights to make ACV - hope it'll be a good batch. In the past my success with making ACV has been slim to none.

Watch this video. I love these folks. They left CA after he had finished chemo and moved into a small single wide trailer that they refurbished. They are such a fun family.
I have made ACV before, but never added the sugar (or maybe I did LOL). Anyway good video and adorable family if you want to follow.

ACV perking away since Oct 10 and has mother on top. So far so good.

This morning I started a batch of cranberry vinegar. Hadn't planned on it but I was given 6 8oz pkg of fresh cranberries. Used 1 1/2 pkg for the vinegar.

Hi everyone,
I just started making sauerkraut. First batch was too salty so into a soup pot it went. Second batch is looking great. Also doing fermented carrots, hope they turn out. I am new to veggie fermenting. Have done kombucha, water and milk kefir for years. Love reading what everyone's doing. Also loved the video on ACV. I did try one year but wasn't successful so I gave up. Sara I am anxious to hear how yours turns out. I will try using that method on next years apple crop. We have three very productive trees.

Kelly I've made sauerkraut but not carrots. Let us know how you like them. So far the ACV is doing good and has made the mother. Have not tasted it yet - maybe in a week or two.
