Hi Lisa,
I have been married for 32 years and still make mistakes like that. Bless our Hubby's hearts for saving our feelings. Yes and I have messed up quite a few meals that even my canine children won't touch.

Tina, that sounds divine!!

I made a pot roast, in red wine, with a pan of Greek macaroni and cheese. I also made turkey burgers with a kale salad and a side of cauliflower soup. One night was chicken shish kebobs. Tonight I am making chicken fajitas tonight with carrots, onions, peppers, cheese, and corn tortillas.

Wow, Nicole all your meals sound delish.

I canned corncob broth this morning and had a scant cup leftover. Added pint of home canned dried beans and a 10oz can of diced tomatoes with chilies, lime, and cilantro. The soup is tasty and have enough for today and tomorrow.

As long as I have a good broth I can throw something into it for soup.

Sara, I love all the meals you make. I envision your kitchen to be such a homey, warm and cozy place with lots of good food sprinkled with love!

Last night dd had her bf over so I made her favorite meal I make: chicken in wine with kale and mushrooms. On the side was a garbanzo, onion, tomato, and feta salad tossed with a vinaigrette. We had blueberry ice cream for dessert which was very refreshing.

Tonight we had a quick bite at a local hole in the wall, called Burgerritoville. We had burgerritos, which are hamburgers but tucked inside flour tortillas. It is OUT OF THIS WORLD good and a bit naughty, but we exercised a lot today.

This morning I canned 4 pints Lila dried bean grown in Mexico. I added fresh turnip greens to the leftover beans & broth. They're cooking away on the stove and should be ready for a early lunch. A smoked pork chop will go nicely with the beans & greens.

I can't believe it. It's the first day of school being out, first day of summer for us, and it is as cold, grey and rainy as a November day! I am going to make a big pot of BEEF STEW with red wine, potatoes, carrots, peas, pearl onions and tarragon. Will make a batch of cornbread for the side. Made MJ's pancake recipe, though I used almond milk instead of cow's milk, for breakfast. So good!

Sara, your canning sounds wonderful! Wish I was joining you for lunch!

Today I made coffee pot roast out of MJ's Cast Iron Kitchen cook book on pg 118. It was standing at the stove eating out of the enamel cast iron Dutch oven good. The recipe is a keeper and I didn't change it a bit.

Sounds good, Sara! I will put it on my list for the next coming weeks. Yesterday we had another family over for the fourth. We grilled hot dogs and hamburgers, garnished with fresh lettuce from the garden, homemade dill pickles, onions, tomatoes, and served with homemade potato salad, baked beans, and cherry pie. There was also homemade strawberry shortcake and ice cream. Yum!

Tonight I am making fajitas using chicken and veggies.

Sister is coming for lunch today. Serving Cornish hens with lemon and rosemary. Green beans and butternut squash. The green beans are out of a can but the butternut squash are off a volunteer vine growing in compost container. Picked when they were only 3" so we'll each get one.

My recipe for store can green beans.

Wash and drain the green beans.
Put in skillet/sauce pan with 1/2 cup chicken broth; Worcestershire sauce & soy sauce to taste; red pepper flecks optional. Simmer until all liquid is gone and enjoy.

Last night was my middle son's birthday, so I made us a big dinner. I used Martha Stewart's new "Grilling" cookbook and grilled up steaks, onions, potatoes, and a romaine salad with her homemade dressing that was delicious! I also made blistered heirloom tomatoes with broiled feta cheese on top and served it with a middle eastern flatbread. Finally we had a KY brown butter cake with strawberries and blueberries tossed with honey & lemon and I whipped up some heavy cream to go with it. Oh yum and boy was I ever tired when we were done eating!

My youngest son loves Sloppy Joe sandwiches and I made him some tonight. I haven't made them for him for such a long time and when I was going through my recipe book I came across the recipe and I had written Joe loves this at the top of the page. He was so happy I made them for him. I made potato salad to go with it and cut up some watermelon. Yummy.

Sara, the tomatoes were delicious, I used a combination of heirloom and cherry ones. Lisa the recipe was simple and I whipped it up in the morning to give the flavors time to meld. We only eat homemade dressings, the bottled kind don't taste as well and actually bother me. Hope you try this one soon.

Lemony Romaine Dressing
Zest of 2 lemons and juice of one
2 small garlic cloves minced
1/2 cup mayonnaise
1/2 cup extra-virgin olive oil

Whisk together lemon zest and juice, garlic, and mayonnaise in a small bowl. Gradually whisk in oil. Season with salt and pepper toss with romaine salad wedges.

Oh my goodness Dawn! I make a dressing just like that. But haven't done with zest, will try that too. So good. Even without the mayo and a touch of salt or parm.
I have a new favorite dressing that I got from Darci Isabella (youtuber, minimalist mother of 10; I love her channel; I have never seen young kids get so excited by raw veggies)
It is:
1 clove garlic
1 cup yogurt
1 t salt (I use about 1/2)
4 oz asiago cheese
1/2 cup olive oil
1 t turmeric
pinch cayenne
handful of fresh parsley
Buzz in blender. It is addicting

Hey everyone,
I promised Hubby I would learn to cook once I retired. Like any resolution I haven't kept up. Tonight however I made panko dijon salmon in my toaster oven. I also been experimenting on Hubby with coleslaw recipes. I made a batch earlier this week. It was very tart and I loved it. Hubby not so much. Tonight I made a batch similar to KFC. We also had steamed string beans and Texas toast. Didn't realize how easy coleslaw is to make. The sauce was 1/2 cup mayo, 1 1/2 of ACV and of honey, celery salt to taste.

The tart one was 1 cup mayo 1/3 cup ACV Tbs pepper 2tsp salt and celery salt to taste.

Nancy---glad you want to learn to cook. The coleslaw sounds good. Do you mean one and a half teaspoons of vinegar or tablespoons? I never thought of using honey. My husband likes about everything I cook. So I am lucky. Not cooking nothing fancy these days---just simple summer food.

I'm making bean soup today. My sister gave me a hambone so I made broth the other day. I'll use part of the broth and add a pint of one of my home canned dried beans; potatoes; onions; can tomatoes; and herbs. Will freeze rest of the broth in ice cube trays. Will be good & handy to season vegetables and soups.
