Last night's dinner was Heavenly, if I don't say so myself, and I'm a happy farmgirl because I have leftovers for lunch. :) I don't normally serve beef to my family several nights in a row, but we are having yummy, organic grass-fed hamburgers tonight on organic wheat rolls, with organic pickles, lettuce, and a dash of organic mayo and ketchup. I'm thinking of throwing in some homemade oven fries on the side. Throwing my "meatless Monday" idea to the wind tonight, ha ha.

Working 10 hr. shift today . . . hubby on his own and there won't be a regular dinner/supper together tonight. But that's the way it is on Mondays and Tuesdays, the days I work.

Yesterday we had simple taco salads.

Today, I am putting 2 lbs. of pinto beans in the crock pot with onions, salt and pepper. I'll mash them later tonight for bean burritos, and use up any leftover sides from our salads yesterday. I'm considering a bit of baking too. Hmm....maybe banana bread....

Yum. All those beans sound good, as do pork chops. We are having a big grilled chicken salad with poppy seed dressing tonight and a loaf of crusty bread.

Gonna have to be easy--Violet has a ballet class at 6:00, I have to stop at the pharmacy, then I have to put the brisket in the brine for the homemade Irish Corned Beef. There's some ground turkey in the fridge, so it's probably going to be turkey chili!!!

I have left over mashed potatoes so I think tonite it will be shepards pie.

I think I'll invent some chicken-stuffed peppers with no rice in the stuffing. I cut the peppers in half, they stretch a little further and I can't eat them anyway.
I get so many ideas from postings. Especially Sharon, who inspired me to make apple crisp last night!

The heavy snow fall means slow cooked sweet & sour ribs with lots of rice. The house smells good coming in from doing chores. The animals are tucked in & lots of wood inside tonight, what could be better

I'm making a meatloaf for supper.....actually 4! lol! Going to freeze the other 3....they hold up so well in the freezer. I could never make a good meatloaf until my dad showed me how he makes his. We take 1/2 hamburger, 1/2 pork sausage, a couple of eggs, about 3/4 C. corn meal, some chopped up red peppers and tomatoes we froze from the garden, and salt and pepper. Turns out great!

Also, I just made the best sandwich for lunch. Oatnut bread, spread a little mayo on one slice, sprinkle some rosemary that I ground up with the mortar and pestel (I hate the way dried rosemary feels when it's whole), ham, swiss cheese, and a couple leafs of lettuce. The rosemary really adds a great taste!

Lisa, i've never tried chicken stuffed peppers. What do you all put in the stuffing?

Oooo...Emily, meatloaf sounds great for dinner. I think we'll have that, too. I haven't made meatloaf in such a long time. I always like the leftovers more than what comes right out of the oven. So.....I'll probably have it for lunch tomorrow, too. Lol.

Chicken and Dumplings and brussell sprouts . I fix the sprouts by boiling water till soft then drain them. But butter in a skillet and add sprouts
and Tony Caschere's seasoning, seasonsalt, a lttle garlic powder and let them cook and toss several times in butter and seaonings until well coated. Yum. Same recipe for broccolli,caulfiflower, green beans. Yummmy.--Marlee

Jennifer and Joan, how did your meatloaves turn out? Got a late start and just popped mine in the oven now.

Chicken and dumplings do sound good! I wish I knew how to cook brussel sprouts. I've tried a couple of times, but mine turn out so bitter. Don't know what i'm doing wrong.

My husband likes to cook sometimes. So that's why he put butter and seasoning on them and put in the skillet for a few minutes. He wouldn't touch them otherwise.

Another meal you can use ground meat or ground turkey. Fry it in a pan then drain . Put it in a 8 by 8 pan,then slice potatoes and layer to top aadd salt and pepper along the way. Also add a can of sweet (drain peas)peas along the layering. Add a large can of cream of mushroom soup.
No water. Spread it on top. According to how may potatoes you might need a large can and a small. Cause you dont want it to be dry. Put spoon in middle and turn it so some of the soup will go down in side. Oven 385-390 for 1 hour or until potatoes are done. Yummy.-Marlee
