I found the cutest little red crock pot that is just right for the 3 of us, and have been using it a lot. Last week, I put meatballs and sauce in it, served over Organic Soy Pasta from Costco that is really very good. I also made a beef stew. I now need to make some more freezer meatballs because we ate them all. Anyhoo...

Last night I made home made sloppy joes. So good! Tonight is my dd's pick: Mama's Fajitas. You'd think the kid would get sick of them, lol!

My sis ted came over and we had grilled chicken, a salad and red and sweet potatoes in a foil pack, I didn't even burn the chicken, for once !!

My dd is on a softer diet due to a dental procedure. So I am being creative, and looking in my cookbook collection for inspiration. Tonight I am making Creamy Asparagus chowder. My DH and I will have a salad to go with it.

Today it's kale two ways. I cooked a bunch of kale in chicken broth to be added to pasta for lunch and then to my sister's beef stew for supper.

Good ol' fashioned cheeseburgers on the grill, salad from the garden, and I think homemade shakes made with frozen bananas as a base for dessert! Sometimes you just need a good burger! :) Hugs - Nini

Hi Girls,

I haven't been on the chatroom much lately, because end of year (school) stuff with my dd and my knitting classes I teach had us all so busy. Anyhoo, life is slowing down now that SUMMER is here finallY!

Tonight I am making lasagna with a big garden salad, french bread, and for dessert fresh berry cobbler (my great grandmother's recipe). Family friends are joining us! What is on your table?

Nini, your burger post sounded so good, so we made burgers the night before with fresh lettuce, onion, and tomatoes, all from the garden, and baked beans, and the last of the cobbler for dessert. Last night it was baked chicken, homemade mac and cheese, and a scrumptious, to die-for salad from the garden!

Tonight I am cooking up stroganoff from an antique cookbook since my dh bought a big box of organic mushrooms at Costco for some reason. It is made with beef stew meat and onions and mushrooms. It's really good, but usually I serve it over potatoes. Think it will be good over noodles????

Fajitas because they are fairly quick...after making my third fruit pie ever! Fresh peach pie! Turned out really good! I'm working on those crusts!

Judith, I love making fajitas, too! They are quick, filling and my family loves them. What veggies do you use? I usually do chicken but experiment with the veggies. I love the traditional onions and peppers, and also love sliced carrots and yellow squash!

Congrats on your pie making! I love to make pies. I bet your peach pie was delicious!

Last night was a great dinner. We had special company - my dd's teacher who she had for two years. He retired this year, so we had him over for a special dinner. I made King Ranch Casserole (he ate three helpings and asked for the recipe), a home-grown salad, and a berry cobbler from home grown berries.

Tonight I think I will make something in the crock pot... Ideas needed. Any suggestions?

Nicole, I haven't thought of King Ranch Casserole in years. It's one of those classic Texas recipes.

Rotisserie chicken on sale today so I got the lemon pepper seasoning. Planning on using it two ways.

1. Chicken Taco Soup w/ white corn tortillas.
2. Chicken with rice.
Will put some of the rice in the soup.
Will freeze some of soup and chicken/rice.

BBQ Ribs also on sale. Planning on using it 2 ways. Since ribs are my favorite meat I will have them straight off the bone for two meals. The other half will go into Chinese pork rice dish for tomorrow's lunch. That should finish up the rice .

Nicole, where I shop they cook their ribs the same way as the rotisserie chicken. They are almost as good as a Bar B Q place. I only buy the ribs or chicken when on sale. I have bought 8 chickens since the last time I bought 9 so my next chicken will be free. It takes me over a year to buy 8 chickens. Glad their computer keeps up with it - I sure don't.

Today I will be cooking fresh cream Crowder peas I bought at the grocery store yesterday. They're grown southeast of Dallas.

Tonight will be grilled tenderloins, accompanied by sauteed Swiss chard from our garden, sliced tomatoes from the garden, and spring onions -- you guessed it! -- from our garden. Lunch today is zucchini and tomatoes, and a chilled green bean salad, as well. This time of year, the struggle is to find ways to use all the garden bounty, as we don't can anything. Once in a while I dehydrate some things, but we like to eat fresh.

Marilyn your dinner sounds yummy especially the Swiss chard.

This morning I am cooking salmon patties for my sister, the freezer, and lunch today. To go with the patties ~ new red potatoes and leftover cream Crowder peas.

Sara got me thinking Rotisserie Chicken, so I picked one up from Costco yesterday. We had that with a salad made with garbanzos, fresh peas, mint, basil, chives, cukes, tomatoes (all from the garden) with feta, olive oil, sea salt and apple cider vinegar. It was scrumptious and I ate the leftover for lunch.

Taking the rest of the chicken tonight and making a homemade chicken pot pie - a family favorite.

Last night I made chicken burgers with peppers in them, homemade pickles, lettuce and tomato on big fluffy buns with a side of oven fries. I love MJ's recipe for oven fries!

The night before, I made Southwestern pork chops with a fire roasted tomato sauce. Pork chops with a kick!

Last night my hubby make "crispy orange beef" from some of our own beef tenderloin! OH MY . . . WONDERFUL!!!
Along with that were some of my freshly picked (cooked in pressure cooker) beans . . WONDERFUL TOO!

Oh, we had lamb curry the other evening . . . locally grown and processed lamb. My hubby is an EXCELLENT cook!
I'm picky about my lamb . . . I do NOT buy it at the store . . . gotta know where it came from!

CeeJay, I love curry anything! I will eat lamb depending on where/who cooks it. Not always a favorite but ok if done up right. Bet yours is good. Also, would you share your crispy orange beef recipe? Sounds good!

The last two evenings we dined on Curry Chicken Chowder. Very Good!!

Tonight I am making a lasagna with fresh veggies from the garden for a friend's birthday. I think tomorrow will be a Chinese Chicken Salad recipe I got from a friend. Tuesday burgers. Will see.

Nicole, today my table is bare ~ I'm nibbling today. Earlier I micro-waved a whole yellow zucchini and ate half of it with only salt. I think it's time for a Starbucks's Frappuccino coffee. Have no idea what I will nibble on next.

Last night we had friends over for dinner at the last minute - picked up a big bucket of fried chicken from a local grocery store chain - they have the BEST fried chicken!

Then I made a big salad of Romaine, cucumbers from the garden, Feta and shredded cheddar! Had onion and garden tomatoes for folks to add to their plates if they liked.

Then I made homemade garlic croutons and some Creamy Asiago salad dressing - YUM!

I made a double batch of dressing and most of it is GONE! Croutons were a hit too - the kids just started snacking on them at one point.

Our friends brought watermelon and a chocolate cake - so we had quite the feast!
