Hi Nicole, that marinade sounds heavenly! Tonight for us will be asparagus and eggs (my mom's favorite) wrapped in tortillas with kale chips and roasted new potatoes.

I am flying solo, so I am making a salad of spiralized zucchini, sweet onion, kalamata olives, prosciutto, some chevre cheese (courtesy of my friend Linda's -wooliespinners, goats), and a simple dressing of lemon juice, clove of garlic, olive oil, and some Himalayan salt.

Lisa, it all sounds soooo good ~~~ wish I was there to enjoy it with you. I'll bring the wine.

Today is beans & veg. But that's not all. I'm been hungry for Braunschweiger liver sausage so today I bough me some. Through out the day I plan on piggy out on a couple of sandwiches with hot pepper cheese on Italian bread. Tomorrow I will give left overs to sisters, Maggie the dog, or chickens.

Some meals recently were chicken quesadillas, grilled chicken salads with buttermilk dressing, and tonight is a juicy steak with a big, green salad and corn on the cob!

Wanted to come on here yesterday, but by the end of the day I was too pooped. We worked seven hours in the garden. Then came in and had a feast: barbeque ribs, Homemade potato salad, corn on the cob, okra pickles, and baked beans I slow cooked in the crock pot. For dessert we made homemade vanilla ice cream in our vintage ice cream maker. Just the three of us, but what a fun family day. Today we will eat the beans and potato salad with hamburgers.

Summer eatin' at its finest!

Tonight it's leftovers from yesterday's picnic, including the best grilled zucchini I've ever had (my son-in-law made it). So . . . Lots of goodies and no cookin' for Grammy tonight! :)

Last night's fried chicken was delish. I made homemade mac and cheese and hot mixed veggies - once in a while a heavy, vintage-type meal just hits the spot.

Tonight we had a homemade pizza with tomatoes and leftover sausage from breakfast. Quite tasty. Tomorrow it's back to light fare!

Last night, we had Texas Rice and Beans. It's made with ground beef and is a classic. Tonight, it's Italian Night. I am making Sausage and Peppers, using the last of the sausage I bought from Oscar's (it's on Rachel Ray a lot; she's a regular). They are in the Adirondacks. Seems like we ate sausage not too long ago, but it was on pizza. My DH is Danish, and they have a relationship to pork products I'll never understand (giggle). On the side, ol' fashioned pasta with sauce. MmMMMMmm...

Supper tonight will be Christmas Lima beans, salmon loaf, and butter potatoes. I seldom put butter on my potatoes so when I do it is a treat.

They're large maroon & white heirloom lima beans; bigger than a butter bean when cooked. Wonderful taste if you like lima beans and I do.
