Marlee, your sandwiches sound great! My oven fried chicken was dynamite - will keep that recipe and plan on trying your Rosemary chiickem this week, Sharon. Loved the strawberry salad - made that recipe yesterday with a pasta similar to the one in the Sisterhood newsletter. I used wheat spaghetti, lemon basil, a can of tomatoes, green stuffed olives, olive oil and Parmesan. Light and yummy for summer.

Today's is the Fourth! Woo hoo! Made barbecue ribs, potato salad, green salad with buttermilk dressing, baked beans in the crockpot, garlic bread on the grill, and ice cream! What is everyone else eating today?

Since Hon is at Boy Scout camp with Young'un and Kid, it's just me and Eldest, so we've got some burgers on the grill...in between the raindrops. We were hoping to go see fireworks tonight, which will happen if the weather stops crying on us so much. If not...I might have a few leftover sparklers from last year.

Now that July 4th weekend is over I'm so done with grilling. Enough already! I'm making Sharon's rosemary chicken recipe tonight with a garbanzo herb salad. Can't wait to try something new. :)

It's a thunderstorm-y, humid day. I'm making "Chicken Bourguignonne". It's made with white wine and chicken, instead of red wine and beef. Served over rice. Needs to cook first on the stove, then for an hour and 35 minutes in the oven. DD and I are going to bake brownies for dessert. :)

DD has requested sloppy joes for dinner, so we'll have sloppy joes on gluten free rolls and some peaches. Just something simple.

Today has been a sad day in our house - DD's pet rabbit hopped over the Rainbow Bridge. So, nothing too elaborate, just something simple.



Wife of terrific hubby and mom to 2 teenagers, 2 bunnies, 2 geriatric goldfish, and the best dog in the world!

Yesterday we threw DD's birthday bash. She wanted our closest friends to come for a backyard barbeque. The kids had a blast swimming and playing. My friends all brought dishes and we have sooooo much food I think we will eat more leftovers tonight. We had organic hamburgers, hot dogs, corn on the cob, potato salad with bacon, an Asian cole slaw, fresh fruit, orzo salad, and chocolate birthday cake. YUM!!

The humidity is beyond belief. Made organic apple sausage in the pan and a green salad with tomatoes, sprouted seeds, kale, and peas from the garden, with a light dressing made with olive oil, lemon, and Braggs soy. Roasted potatoes. Did not want to turn the oven on, but it was quick. Will finish evening under the air conditioner, lol!

What ideas do you have for hot weather fare?

Well I've been absent from "Dinner tonight" for a VV-EEE-RRR-YYYY long time! Glamping road trip, working, catching up, enduring drought and dry hot weather.
BUT, tonight my hubby did Baja Chipotle with yellow crookneck and zucchini squash our neighbor gave us with poblano pepper and onion, topped with cheese. Tomato and avocado slices on the side. Supper on the deck . . yummy! Pleasant!!!

Just found this chat. I enjoy hearing what others are having for dinner; I am always looking for inspiration. Tonight is the first night that we are all home and no houseguests in a couple of weeks...we just returned from my daughter's wedding in Colorado and then my husband was immediately off for a business trip. I have laid pork chops out to thaw and I am hoping that DH will put them on the grill. It will be a simple meal; I have a lovely European grain mixture that has a rich, nutty taste that I plan to cook to go with the chops.

Missed a couple of days...made that oven baked fried chicken (not really fried, more faux fried) again and it was super super! Last night DH grilled a steak outside on the pit, and I made red oven potatoes with corn on the cob. Had a big spinach salad for lunch, so I figured one meal without green was okay!

Got my first squash from the garden tonight, so I am making a family favorite: chicken fajitas. Will make the fajitas with organic chicken, yellow squash, carrots, and green peppers. I am going to make homemade pico de gallo to go in them as well, and we have organic plain yogurt instead of sour cream. And homemade tortillas. Yummy!

Tonight we will have roast...potatoes...peas...sliced tomatoes and a southern girls favorite...cornbread. Love love love oven fried chicken...don't have to use too much oil and it turns out delicious. So good with coleslaw and other veggies.

I'm on the mood for crunch, so we are doing taco salads with ground bison instead of beef. I have avocado, lime and cilantro to throw in with all the "regular" ingredients. We really like doing this because we put all the chopped, sliced, etc ingredients in bowls and everyone can compose their own.

Tomorrow will be something better since there is a farmers market visit happening in the morning - yay!

Cindy and Judy, both your dinners sound delish! I need some inspiration. This time of year we are so busy and lazy that making dinner sometimes sneaks up on me...last night made "Texas Rice and Beans". Tonight I broke down and picked up a local pizza. Not organic, but very good. We were going to my visit my friend and her dd tonight for dessert.

Tomorrow I have on the menu some grilled chicken apple sausages with Kale and a German Potato salad recipe. It's a hot dish made in the skillet.

Where do the days go? I've been spending so much good time with my dd, that I have not been on here every day. Just grilling burgers tonight, same as Judy was I see, but our breakfast/brunch was a bit different and really good, and could be made into a dinner. We made scrambled eggs, then rolled them in whole wheat/flax seed tortillas, garnished with freshly grated farmhouse cheddar cheese, and homemade pico de gallo. :)

Too danged hot to cook! Hubby and I had a ragged, discombobulated day and we just sat on the deck wishing someone would just show up with something yummy and serve it.
We ended up coming in the house and cooperatively making nice salads with spinach, avocado, tomato, summer squash, onion, poblano pepper, mushrooms and a bit of shredded extra sharp cheddar cheese. I had tortilla chips with mine, hubby had garden herb triscuits. It was good!
