This week's been crazy...just logged on to say "Hi". Sharon, the spinach ravioli is a fresh organic ravioli I buy ready-made...the pumpkin sage sauce is homemade. I'll post the recipe for you, maybe tonight if I get a minute.

Tonight I am taking dinner to a family who had a death of a loved one. I made Chicken and Broccoli casserole, so I just doubled the recipe so we can have one, too. I also am bringing them a green salad with homemade buttermilk dressing and a loaf of MJ's recipe for Irish Sodabread (MJF magazine, Feb-Mar 2010)

Oh, tonight's "Frozen Pizza Friday"!

This week, hubby suggested I use alliteration to decide what the heck to make for dinners, because I really had no inspiration on Sunday. So what did we come up with?

"Meatloaf Monday" (a Southwest Meatloaf recipe made on Sunday night, and I just popped it in the oven with potatoes on Monday night)

"Taco Tuesday" (used leftover meatloaf instead of ground meat and it tasted just fine)

"Wok'in Wednesday" (a.k.a. quick stir fry with chicken, veggies, brown rice)

"Three Sisters Stew Thursday" (pre-cut butternut squash, diced green pepper, frozen corn, diced onion, 2 cloves minced garlic, can of diced tomatoes, small box chicken broth, 1 Tb. chili powder, all thrown into the crock pot - we topped it off with a squeeze of lime juice, minced cilantro, and blobs of sour cream. Husband said "Delicious!" and it needed no doctoring.)

And of course, "Frozen Pizza Friday" (intended as "Franks n' Beans" Friday but I saw the pizza first and adjusted the schedule a bit )

Oh, I forgot - we also put a can of pinto beans in the Three Sisters Stew - it's the third "sister"!

Missed the weekend post ...oops. Busy weekend. Did everybody have corned beef last night? We did. I also found organic cabbage so I was a happy camper. Love your themes, Katy! I'm doing "Meatless Monday".... Baked spinach ziti. I'm going to post my sauce recipe in a bit too.

Yesterday I got a birthday package from Texas and among the goodies were some dried black eyed peas from a local farm near my dad's place. SO tonight I made a big steaming pot of black eyed peas with cornbread. Made the cornbread with coconut oil - yummy!!!

Okay, here is my recipe for my pumpkin sauce. I saw one in a magazine, but didn't like the cream base, so I made this up. It freezes well.

Start with a white sauce base: 1 TBSP butter, 1 TBSP flour, 1/4 tsp salt, dash of pepper. When melted and stirred together, add 1 cup lowfat milk. Cook on medium heat until bubbly and thick. Add 1 cup pumpkin puree, 2 TBSP snipped fresh sage OR 1/2 tsp dried sage, dash of nutmeg, and 1/4 cup parmesan cheese. Serve over pasta.

i did a ham in the crock pot last night, so we are having ham and potato soup. or maybe ham sandwiches, depends on how late i am in getting out of work.

It's been go go go nonstop here. I made pizza and cupcakes for DD's girl scout troop on Thursday, as I taught them how to start organic seeds indoors. Friday we had Mac n Cheese and broccoli. Tonight was an MJF bakeover (love them!) and I have a cake in the oven for tomorrow.

Tomorrow will be a ham, deviled eggs, green beans with tomatoes and fresh basil, and mash potatoes. Dessert cake and whatever goodies the bunny brings. ;)

Ham tonight. Didn't make the ham supper yesterday as DH surprised us with an Easter luncheon out after church. We were all so stuffed we only ate deviled eggs for dinner last night. And chocolate. Hope everyone had a great day yesterday. If I never see a chocolate egg again, that would be fine. Hee Hee.

We are finally done with ham :) I have the bone and some smaller pieces of ham in the freezer for some ham and bean soup some evening.

Tonight is:

~The Thigh Who Loved Me This is a chicken thigh recipe in a spicy sauce. A recipe from the Crazy Plates cookbook, they play on words for recipes like Obi Wonton Soup, The Roast from Christmas Past, etc. Really some good, healthy recipes that are flavorful.
~Garlic Mashed Potatoes
~Roasted Asparagus

I haven't been to this thread in a while....

Last night I baked Lasagna Ruffles, using homemade goat's milk ricotta, and some peas and carrots.

Tonight it's either leftovers, or Quinoa crusted salmon on a bed of baby kale/granny smith apples.

The Chicken and Dumplings recipe I made the other day was from MJ's special baking issue, with Budget Mix. It was delicious! Will make that again. Lately, I haven't cooked much since I have been on the go or we got takeout. But tonight I'm making a big dinner: pork roast with fresh herbs, homemade Mac n cheese and a big salad. Fresh iced tea to wash it down. :)

Anybody else making something yummy?

Hmm...haven't been on this thread for a while. Tonight I am stirfrying some chicken, green beans, onions, black walnuts, and hoisen sauce. Also going to make a salad with lettuce, beets, celery, and feta cheese.

Sounds yummy Sharon! I love the first fresh asparagus of the season! And yes, please, to the strawberry shortcake!

I'm manning the new grill tonight--bacon wrapped filet mignons with fresh herb butter, baked potatoes and grilled asparagus.

If these clouds hold and it doesn't rain, we may just eat on the porch!

Me too Jonni! I think it's even better making the trek along the ditches picking it :) Your dinner sounds great! Mmmmm, bacon :) My honey has a t-shirt that has a pig on it and it says Bacon...it's meat candy :)
