We had the burgers for lunch. Made a garden salad with lettuces, tomato, cucumber, fresh corn, mint, oregano, lemon basil and onion. Homemade dressing. Grilled chicken on top. Garlic toast. DD went to a birthday party at a cake decorating place and came home with amazing cupcakes she decorated. I ate one with a candy worm on top.

Well I WAS going to make Lobster Bisque but my husband ended up getting called today by another farrier to help him go shoe a bunch of horses an hour and a half southwest of here. Guess I'm having cereal!

I am trying 3 recipes out of the June issue of Food Network magazine tonight - - chicken with red pepper aioli, shaved fennel salad, and toasted almond pasta salad. All are served cold which is great as it is supposed to reach 103 here today! Last night I made some horseradish chive butter to top our steaks, also out of the June issue. Yum!

Trying a new recipe from Extending the Table tonight. Shredded beef, Venezualen style. We'll be enjoying it with black beans and rice. Hopefully, it's a hit because it's easy, cheap and in the crock pot!

We're still on our "buying a house next week and need to keep our bank account padded, just in case of any surprises" budget, so for us dinner tonight is spaghetti with meat sauce and salad. How boring is that??? I am such a creative dinner maker and I can't stand this boring budget meal thing much longer. Peanut butter and jelly is going to be banned from our lunch table for at least a few months once we have our regular budget back again LOL! At least I can enjoy reading what everyone else is doing for dinner and wishing I was coming to dinner :)

Last night I made homemade spaghetti sauce and noodles with fresh picked green beans.

Tonight, I'm trying a new recipe to use my beets in: Farfalle Pasta with Beet and Vinaigrette and Parsley Pesto.

@Lisa, thanks! I never guessed this thread would go for so long. :)

Last night I made a really good dinner: A pork roast roasted with fresh garlic and fresh rosemary...smelled so good in the oven, with squash casserole from the first picked squash of the season, and cumin-roasted brussel sprouts. More chocolate fudge cake I baked for dd's birthday. So delicious!


Not sure yet about tonight.

Going to make a taco salad but make a few burgers on the grill for the boys...they aren't too thrilled with taco salad, baked fries, corn on the cob and promised tham an ice cream cake for dessert.

Here's a picture of my son's King he caught off of LaPush. Made some pretty tasty tacos and grilled salmon!! He is an AVID fisherman (and it helps that his dad also runs a fishing guide business!)

This morning my 13 yo dd made french toast with farm fresh eggs, goat's milk and cinnamon. She also sliced up potatoes to cook up on the grill at the same time. We topped the french toast with homemade black raspberry/honey syrup. Yum!

Not sure on what to make for dinner yet. With the kids home from school, I can't keep enough fruit in the house either.

Sabrena! Great photo! :)

Tonight we are all tired from yesterday and a day in NYC. Going to be making a low-key summer meal. Marinating some chicken breast. I'll cut into strips and cook it fajita-style with some yummy spices and am serving it with a chilled, herbal and feta chick pea salad. I will throw in some cucumbers this time. Yummy!

Oh! Christina - that sounds wonderful! I have an over-abundance of zucchini and yellow squash and was hoping you all would give me some inspiration! Will you please share your squash cornbread recipe when you have time??? Thank you!!!

Sabrina - that's AWESOME! What a great picture! Your little fisherman has every reason to be excited and proud of himself! Rah! Rah!!!

I took out ground beef and was going to try to make up some sort of spicy stuffing for the yellow squash tonight... Dear Lord, there is SO much yellow squash.... Good stuff, though! LOL!!!

Sure thing Nini. It was a big hit last night, and they all raved about it. Even though they note that mashed squash would be the best I simply grated zucchini, and did not peel it either. It was so delicious. This recipe is a keeper. I'll post it on my blog later too.

Squash Cornbread

1 cup buttermilk
1 tsp. baking soda
1 cup sour cream
2 Tbsp. honey
2 eggs
3/4 cup mashed squash, at room temperature
2 cups corn meal
1 1/2 tsp. salt
1 1/2 Tbsp. butter

Preheat oven to 350°F.

Dissolve the soda in the buttermilk. Stir in the sour cream and incorporate the honey in a thin stream.

In a medium bowl, beat the eggs, add the squash, corn meal, salt and liquid mixture.

Melt the butter in a 9" pie plate or baking dish and tilt the pan to coat the dish well and pour the excess butter into the batter.

Stir in, and pour into baking dish.

Bake 30-40 minutes, on until batter is set in center. Serve hot with butter.

Recipe notes say this is excellent toasted the next day with butter and honey. However, we had no leftovers - Ha ha ha ha!

Eggs in a nest sounds wonderful!

Last night a tried a new recipe: Baked Chickpeas with honey

It's very good, but more of a bland side dish (the honey in it gave it the flavor).

I'm busy in the kitchen canning Queen Anne's Lace jelly and Sweet pickle relish today. Not sure on dinner. Maybe Kohlrabi and potato soup.

Well, I've sure been "missing" out on dinner for quite some time!
Been on a road trip, glamping, messing around . . . and then trying to get back into the routine.
