Tonight I made a Persian beef/celery/herb stew for dinner (celery khoresh) and barberry saffron basmati rice. We are slightly cooler this evening and it seemed like the perfect meal for us. The herbs are sautéed for this dish with the celery before they are stirred into the beef stew. Hearing them crackling away as they cooked reminded me of my late MIL when she made this dish. We lost her a year ago in August. Making this meal made me think of her and how much we all miss her.

Sara, poormans steak is hamburger, with egg, corn flakes, and milk. Make into oblong patties and dredge in flour and fry. Then cover with cream mushroom soup and bake. happy cooking everyone!

Yesterday I had a butternut squash that needed to be cooked. One butternut squash is more than one person can eat in a week, so I made two dishes out of it. The part with seeds I halved, roasted with butter then froze it. The neck part I cubed and made stew with my canned crowder peas, onions, garlic, and fire roasted tomatoes. I added garam masala spice and garlic. Very good, I will make it again with whatever bean/pea I have on hand.

Sara, I’m on a butternut squash kick this week too! I don’t grow my own so my method is to buy it peeled and cubed from the grocery store, it’s much safer for me that way!!! But I plan to make an Instant Pot butternut squash soup later in the week with mine.

Your recipe for the stew sounds great! And similar to a “Three Sisters Stew” recipe I kept a while back, which uses fire-roasted tomatoes. It’s a vegetarian recipe, but I prefer to swap in chicken broth. I was surprised how tasty it was actually!

Tonight I’m making a “pork and pears” recipe I photocopied from a Gooseberry Patch book years ago. My notation at the time was “easy, tasty, cheap!” My husband already had the chops cut up and frozen, and pears are just in season :) It is a stovetop recipe that uses balsamic vinegar in the glaze.

Pear with pork is a tasty combo. I may look for cubed butternut squash in the stores where I order online. Already cubed would be a lot easier than wrestling with a whole one.

A little off the subject but I have always wanted to grow a 3-sister plot in my garden. Corn with beans growing up the stalks and pumpkins on the ground. Maybe next year will the year I get it done.

Sounds good. Yesterday was my husbands birthday. Went all out and did his favorites, lasagna, and german chocolate cake.
Of course got to looking, not enough lasagna noodles. So he even got homemade noodles. Yum yum.

Lunch is my biggest meal of the day. Today I had two lamb chops in my Tikka Marsala sauce that I put up in Oct. It was so good, so glad I did the sauce. Served with leftover creamed potatoes.

Sara, that does sound good! Vegetarian for us tonight - I found a recipe for Broccoli Cheddar Mini Pies, made with puff pastry. So I figured I’d try it with a salad! Fingers crossed!

Judith, enjoy your venison stew. It's been years since I had venison chili. It was very good. Years ago, a farmer friend gave me bar-b-q wild hog ribs. They were lean but good. Here in Texas, it's open season on wild hogs.

Crock pot dinner over here too, ladies! Bean with bacon stew and a salad, quite possibly some cornbread. My husband likes a recipe with chopped chipotle peppers. Yum!

Sounds good Kate! My old Sunbeam crockpot that was a birthday gift in 1975 finally bit the dust. I got a new smaller one as I'm only cooking for two now. I tried using the slow cook button on the Instantpot but it wasn't hot enough.

I usually have an early lite supper around 4 or 5 p.m. Today it's a small lamb chop with sugar snap peas. I semi fast between supper and when I have my 1oz of EVOO and hot tea or mini coke which is around 7a.m. My system seems to do good on this routine.

Sara, that is some good discipline you must have for the semi-fasting! My mom tried fasting a few years back and she lost a few pounds I think. But it wasn’t something she planned to do long-term.

Judith, I am sorry for your loss! When appliances get that old it’s almost like losing a family member…! My crock pot is actually my mother’s, from around the same time period! We like it because it’s the kind with the Corning insert. So you can finish your meal and pop the rest in the fridge with nothing to clean up after. I believe it can also go on the direct heat but I haven’t needed to do that with mine so far. I hope it lasts me a while longer!

It’s crazy that of all the accoutrements my mom cooks with, the liners were not one of them! Honestly I don’t think I even saw one “in action” until after I got married! But I bet (depending on the burn factor) they save a ton of scrubbing!

I use liners because I deal with MS fatigue and by the time whatever is in the slow cooker is done so am I and the last thing I want to do is scrub the ceramic insert. Seems like every slow cooker I have ever had always had hot spots that burnt the food.
