Hi Farmgirls!

MMMmmmm, mmmm. I am making one of my favorite meals for my dd and dh tonight. Homemade Texas chili, served with fresh buttermilk cornbread baking in my cast iron skillet. Will top the chili off with cheese and sour cream, and wash it all down with fresh-brewed ice tea! It's a chilly night out, so it's a "chili" night in! Wishing I had a kitchen-full of farmgirls to share it with!

Does anyone else have anything yummy you're cooking up tonight?

I made split pea soup (with lots of ham) this weekend. I probably haven't made any in a year. I'm looking forward to eating it tonight. Most everyone I know hates it, but lucky for me, my hubby likes it almost as much as I do.

Michele,

Oh I love split pea, too. I think that is my favorite soup. We have a diner that makes all their food homemade, and we go there every once in awhile. They float homemade, toasted croutons in their peasoup. Sounds yummy, hope you enjoy! (My chili was great, and the cornbread was a recipe I hadn't tried before and it was soooo good)!

I made garlic spaghetti with chicken breast and served it with a salad. (Garlic spaghetti: 8 cloves of garlic, parmesan cheese, basil, olive oil, pasta, etc.)

Tonight we had pork roast into which I had poked bits of garlic; baked potato and peas. What I do want to tell you about is the tortellini soup I made the other night. It was to die for, for it had garlic and cheese Italian sausage in it. There was also spinach, onion, celery, tomatoes and of course the tortellini. Before serving sprinkle with fresh Parmesan.

Having my leftover chili and cornbread for lunch today. Audrey surprised me by asking for the same in her school lunch! Tonight, DH has asked for beef stew since it is so cold. I usually try not to make beef two nights in a row, but am going to make it. I think I will make an "Irish Stew" version, and some of MaryJane's Soda bread from the Valentine issue of the magazine a few years back. What do you girls have cookin' for tonight?

Tonight is "Kids Cook Night"

They are making veggie burgers on whole grain buns (store bought for them of course), and homemade french fries.

Last night I roasted a couple of the chickens we raised last spring. Yum!

Tonight it's Pioneer Woman's Cajun Chicken Pasta. I've got some black pepper linguine from a local organic pasta maker and all I need is a red pepper and whammo, dinner. It's such a good dinner--not "light" but so good!

Last night, I finished up the leftovers from the Pioneer Woman's pot roast dinner I made on Sunday. A local organic grass fed chuck roast, carrots, mashed pototoes (also local) and I have to say, it was the easiest and best pot roast I've ever tried. It could become a regular in our household!

Spicy shrimp and grits (if I have the energy). Have all the ingredients. fibrofog has taken over. My Florida BIL makes this and Yummmmmmmmm!

A lot depends on how the Mister is feeling (he's recovering from surgery). If he's up to it we may go to the store, and then I'd like to make some Milk-Baked Whitefish. If not...I guess coconut shrimp with pasta and mixed vegetables (he calls himself vegetarian, although he eats fish).

I made a pork roast in the crock pot, mashed some potatoes, corn, fresh strawberries, bread and butter, followed by a yummy apple crisp fresh out of the oven with a scoop of vanilla ice cream... I just wish I had made gravy... Oh, well.

Time for someone else's cookin' . . . ordered a takeout calzone from our favorite pizza/calzone place. We enjoyed a spicy, tasty, yummy "Hell's Kitchen" calzone!! Spinach salad on the side. Most of the time we GO to the Dolores River Brewery and enjoy the absolutely best pizza in the west. Occasionally, like tonight, we call in an order for takeout.
