I've been hanging out on the virtual porch and mentioned a great recipe I have for Lemon Zucchini Bread. I have to give credit where credit is due as it's not my own, but it is absolutely fantastic. Won me the first place ribbon at the county fair a couple years back. This recipe is from a cookbook I have titled Best Recipes From American Country Inns and Bed & Breakfasts by Kitty and Luciana Maynard. I hope everyone that gives this bread a try enjoys it as much as we do. I sell it at the Farmers Market and everyone that buys it only has good things to say about it.
3 C all-purpose flour 1 Tbs baking powder 1 C vegetable oil 2 C sugar 2 Tbs grated lemon zest 1/4 C lemon juice (I use fresh squeezed) 3 eggs 1 lb grated zucchini (I use 2 Cups) 1 C chopped pecans (I personally have never used them in this recipe as it's fantastic without the nuts, but it's your personal preference)
Preheat oven to 350. Mix the flour and baking powder together in a bowl. In a separate bowl mix the oil, sugar, lemon zest, and lemon juice. Add the eggs, one at a time, beating after each addition. Add the flour mixture to the egg mixture and mix well. Add the zucchini (and pecans if you are using them). Grease two 4 x 8 inch loaf pans and divide the batter between them (I flour my pan some also because sometimes these loaves don't want to let go of the pan). Bake the loaves about 50 minutes or until the toothpick comes out clean. Cool slightly and then remove from pan to finish cooling.

Thank you, I just brought in a very large zucchini that had been hiding under some leaves. I have all the other ing, and we will be having this very soon.
Forget buns of steel, I'd rather have buns of cinnamon! Don't out smart your common sense!! Farmgirl #680! |
