I made an easy, yummy potato soup last night. Warm in the tummy on a chilly evening.
I took 2 cups of large cubed potatoes
about 1/2 cup shredded and/or chopped carrots
1/4--1/2 cup chopped celery
seasonings (whatever one wants)
Place in large pot with
1 cup water
Bring to a boil, reduce heat. simmer, covered about 15 min or until potatoes are tender.
Stir in 1-3/4 cup half and half
1/2 + shredded ham]heat up
I made a thickener with flour and half and half
reseason to taste
Top with grated cheese if you want to (I didn't) and ENJOY

I made potato soup for myself last night too. Made a roux of 1/4c each butter and flour, added a vegetable base from Trader Joe's instead of the beef base I usually use, about a cup of heavy cream and the same of milk and two chopped leftover baked potatoes. Some sea salt and pepper, let it thicken and simmer for a few minutes and was very good. Added a bit of grated cheddar just before serving for another good flavor. The restaurant (jewish deli) I worked at for many years had very good potato soup. I asked the cook what his "secret" was and he told me he used beef base instead of ham or chicken like most used and it gave a heartier taste...I do think he was right.

I love potato soup and yours almost looks like mine, but I add carrots and a can cream of chicken soup, yummy! Pepper Jack soup or nacho cheese soup is good too! Now you got me wanting to make soup! lol

we made a potato soup a few nights ago too!
started with onion, garlic, celery, carrot & chopped portabello mushrooms sauteed in a bit of olive oil,
then added vegetable broth & peeled, chopped white potatoes & sweet potatoes & cooked until done...
just before eating, i added some half & half & soy milk & a roux made with flour & soy milk to thicken...
the mushrooms made this a very rich & earthy soup! EXCELLENT!
(oh yea.. season with salt & pepper & anything else you like.. we used spike seasoning)

I don't like to add canned soup which is why I just make a roux of milk and flour to thicken. But to each his own! I take my old masher and scrunch some of the potatoes too and leave some chunky. It's all good. Anyway we like it-it still is yummy. ENJOY MB

I like to cook my potatoes in a bit of my own chicken stock and then when the taters are tender, mash coarsely and add a bunch of sour cream. Stir, serve with crumbled bacon, grated cheddar, and chopped onion for toppings. Yummeh.
