This recipe I've been using for a couple years now. These are spicy, some people love them and some think it's too spicy. From Famous Dave's Backroads and Side streets cookbook, page 96... Fire and Ice Cukes & Onions 2 medium cucumbers 1 medium white onion 1 cup vinegar 1 cup sugar 1 cup water 1/4 teaspoon coarse ground black pepper 1/4 teaspoon crushed red pepper flakes 1/4 teaspoon celery seeds 1/4 teaspoon cayenne 1 teaspoon salt Slice cucumbers and onion on a french mandolin with the grate or waffle edge 1/8" thick. Place in bowl. Mix vinegar, sugar, water, black pepper, red pepper flakes, celery seeds, cayenne, and salt in a bowl, making sure the sugar is dissolved. Pour over cucumbers and onion. Separate onion and toss cucumbers to coat with the marinade. Chill in refrigerator overnight. To serve, drain and reserve marinade, which caqn be used again. Yield: 4 to 6 servings

Karen, You are a girl after my own heart! These look yummy! Pickles should have bite to them! I am going to try these! Thanks! ps. Do you have a good garlic or Polish pickle recipe you'd like to share? I look forward to August to put up pickles! I have been eating them since childhood. I call them "German Popsicles"...
