So far I've put up dilly beans, kidney beans and today is turkey stock. When I'm done today I will have canned 24 quarts. I still have 3 turkey carcasses to make more stock from.

Michelle, potato soup is one of my all time favorites.

My sister Betty lives in the next county over from me in a little town on a farm. The other day her nephew by marriage told her about the Farm to Table project. The federal government buys food from the farmers and dairies to give to the people because of the virus. Young men from the local Baptist Church drove a hundred miles to pickup 1500 boxes of food to give out in their town. Around five that night he called Betty to make sure she had gotten her box and she said no. He came to take her to the church and the men loaded 4 boxes into his truck. It was at the end of the give away time and boxes were left so she got extra.

Now to what that has to do with me. Betty gave me 5 lbs of new potatoes that I hope to put up this coming week. One funny thing I just have to tell y'all. Betty was already in her nightgown when he called and he told her to put on her robe and come as she was because she would not be getting out of his truck. So being the farmgirl at heart that she is Betty went in her gown-tail. Old folks used to say gown-tail all the time when I was growing up and I catch myself saying it from time to time.

I found Goya cannellini beans on Amazon so that's what I'm canning this morning. When it gets colder I think I'll make a small pot of minestrone soup with a pint of the beans.

You gals amaze me with all that you do.
We will soon be working on getting the woodshed full for this winter. We aren't as far north so time to get things done lasts a bit longer here.

You ladies have been busy. Beans and soup, you should be ready for winter. Sara I hope you can find beans else where if you need them. No canning for me, till the wood pile is done. After 3 days I am tired. We still have a bunch to split and pick up.

I just got done canning 10 quarts of Black Beans and Sausage Soup.

I agree with you, Michele, the leave are turning such beautiful colors!

Michelle, this morning it's black beans w/fresh cilantro. I don't grow cilantro because it bolts on me so I buy it from Aldi when I want it.

The company I buy heirloom beans from have sold out of my favorites so I can't buy more until next year. There are other supplies but they are high and s&h even higher. I have a lb each of Christmas limas and cranberry beans and that's it until next year. Never thought I would see dried beans in short supply too.

I love making soup out of canned items. So quick and easy. Hows the bean canning going Sara? Your keeping busy as always. Wood harvest is going well. Took two days off this week. Tired but making good progress. This weekend is the youth hunt, so will be keeping close to the house. We know where the grandkids will be hunting so not a problem. The woods are so beautiful this time of year.

Back to canning dried beans this morning - 4 pints pintos w/fresh sage.

Sharon you are so right about how handy the veg broth is. Several days ago I made veg soup with one pint each of my home canned veg, chicken, and mushroom broths.

Michelle, thank you! Yes, cranberry season! I was just thinking about that today. I do have some in the freezer so I will probably make some cranberry sauce and cranberry juice. Love cranberries :) Wood cutting is harvesting :) Hope it goes well and safe :)

Sunday I decided to go ahead and make veg broth with veggies I had on hand, and not to collect bits and pieces in the freezer. It turned out so good - canned 4 pints.

Good luck hunting Sharon. Canning soups and the like can wait till hunting season is over. I was able to get 9 lbs. cranberries, but I washed them and put them in the freezer for now. Waiting till my jars empty, and I have more time. Next up is wood cutting season. I call that the last of the harvest season.

Okay so I just typed this long post and it disappeared :( Frustrating.

Anyway, I have discovered hunting so I haven't had time for canning lately. Just got some Wild Turkeys and Deer season starts in a month. I did get drawn for a bear tag but haven't seen a bear in a couple of weeks. We'll see how that goes. I have been wanting to start on canning soups, etc. but with my husband out hunting I don't want to be in the middle of canning only to put it on hold because he harvested something that requires a lot of attention. Soooooo :)

Joan, you should! Be encouraged! If I can 'can' anyone can :) It really isn't as scary as it sounds and it is great having your pantry stocked for eating and gifting :)

Michelle, yum! I haven't even picked apples yet! I would like to for Apple Pie Filling and hopefully make some more cider. It's a lot of work for the cider but worth it :)

Sara, I remember you posting about your pickled beets last year. Unfortunately I didn't harvest enough for canning so I just roasted some and froze them :)

Andrea, I bet your home smells great! I have heard that Uline still has canning jars and lids. I haven't checked it out myself because I still have some but it's worth a shot :)

A canning poem for you!


Canning Time

The cucumber is dilled.
The chili is chilled.
The canning is done for the season.
By the stove I have toiled
The jars have been boiled.
Good food from the garden's the reason.

It's a comforting feeling,
When I hear the jars sealing,
And each jar is filled to the top.
That sound makes me smile.
Says, It's all been worthwhile.
When I hear all those sealer lids Pop.

All that peeling and chopping,
and constant brow mopping.
Hard work is all part of the bargain.
There's no time to be bored,
And I thank the Dear Lord,
For each blessing that comes from our garden.

Cause when winter comes calling,
And the North winds are squalling,
And we suffer from lack of the sun.
There'll be no lack of food,
To darken our mood.
Cause in August the canning was done.

I have pickled carrots using a pickled beet recipe that calls for roasting the beets instead of boiling. I like this recipe and the roasted pickled carrots are so good. Best pickled beets I ever made.
