Posted - Mar 26 2024 : 10:43:05 AM Tara lemon slices do take a long time to dry. I tried it once, now I either dry or freeze lemon zest. Reminds me I need to do another batch or lemon zest. Lemon zest is handy for hot tea, lemon pepper, or herb/spice blends.

Posted - Mar 26 2024 : 08:58:08 AM I recently purchased a freeze dryer and have had a lot of fun experimenting with it. Today I am drying strawberries to powder for a version of “nestle quick”. My grandchildren love strawberry milk and I can make this with much less sugar (I am using monk fruit for a sweetener) and no preservatives.
A little rain can straighten a flower stem. A little love can change a life.

Posted - Mar 20 2024 : 1:00:23 PM Chives are one of my favorites! Mine are starting to brave the cold but they're not ready for harvest yet. Do you use fresh mint or dried mint leaves for the sugar? For my herbal oils I use dried herbs added to the oil then put it in a crock pot with water in it on the warm setting (lid off) for 24-48 hours (check the water to keep the level above the oil). Then strain the herbs out and it keeps on the counter for months (if I don't use it all first!) I do this with plantain for lotion and it's lasted all year in a jar with no problems. I think the key is to make sure the herbs are dried. It's the moisture that causes problems.

Posted - Mar 16 2024 : 09:56:31 AM Drying chives today. I re-potted my chive plant, so it was a good time to harvest the outer leaves. To harvest chives, take the outer leaves just above the root. Chives do not loose quality when they bloom. Blooms are edible. Chives and blooms hold up well in herbal vinegars.

Posted - Mar 09 2024 : 07:27:54 AM Heather mint is my favorite herbal sugar. You can control the mint flavor by how much mint you layer in the sugar.
Recipe for mint (herbal sugar) sugar: Layer sugar in bottle of jar than a layer of mint. Keep layering sugar than mint until jar is filled and use airtight lid. Use whole leaves so you can take them out as you use the sugar. If the leaves crumble sift the sugar or use a tea strainer to strain your hot tea.
One of my favorite herbal vinegars is tarragon. French tarragon won't grow in our Texas heat so I have grown Texas Tarragon aka Mexican marigold. The leaves taste like tarragon and it has pretty wee yellow flowers.
I make small patches of herbal oils, store them in the refrigerator, and use them in a couple of days, because I am afraid of bacterial growing in the oil. I have never bought herbal oils so I don't know if they have to be refrigerated or not.

Posted - Mar 09 2024 : 06:18:35 AM I love herbal infused oil (rosemary is one of my favorites too!) and have wanted to try some vinegars. The sugar sounds really interesting. I would like the mint for sure but I'm not sure about the lavender and rose. Have you tried them before Sara? I'm not a big fan of the perfume taste some flower teas leave in your mouth - I wonder if the sugar is like that or not.

Posted - Mar 08 2024 : 10:58:21 AM Tara, along with making salt/spice blends you may want to try herb flavored sugars like mint, lavender, and rose petal. All herbs used in blends should be grown organically for best results.

Posted - Mar 08 2024 : 10:25:16 AM 1rst time drying tomatoes. Some to eat on a sandwich, rest to be made into tomato powder. I am experimenting with making my own salt/spice blends. Two years I bought a zip lock bag of spice while visiting Charleston. Once I have tomato powder I can try to copy the blend. Sadly we don't get to visit Charleston often

Posted - Mar 05 2024 : 11:24:41 AM Good reminder Sara. The first time I made mushroom powder I didn't turn it upside down. When I took off the lid very fine mushroom powder exploded all over the room. I never forgot again. I love eating mushrooms but definitely don't like breathing them.

Posted - Mar 05 2024 : 05:41:51 AM Denise, I make small batches of both mushroom & tomato powders. I store mine in a 12 oz wide mouth ball jar. The wide mouth jars make it easy to dip out what I need. Since I use the powders within a month I use the white plastic storage lids. I like the easiest of the storage lids. To store longer I would use a canning lid & ring, they are airtight. Store the powders like you would spices.
A hint on emptying the blender after making the powder is to turn it upside down on wax paper; tap it on counter to loosen all of the powder; than you can funnel it into the jar.

Posted - Mar 04 2024 : 07:03:09 AM I used a Tbsp of the last of the tomato powder this morning in a pot of soup. There's a 14oz whole tomatoes in the soup but I wanted more tomato flavor. The powder adds flavor without adding bulk to the soup. You know how soup grows when you put a little of this and a little of that in it.
Made tomato powder this morning. I like to make a little at a time because it has a tenancy to clump so I try to use it in a month.
