So far I've put up dilly beans, kidney beans and today is turkey stock. When I'm done today I will have canned 24 quarts. I still have 3 turkey carcasses to make more stock from.

Six quarts of golden chicken broth!

I recently read an article about rendering and cooking with animal fats, so Iíve been collecting the gorgeously yellow fat from the top of the broth before processing. Iím planning to have the butcher save all the pork fat from our hog for rendering also. Who cooks with lard, tallow or poultry fat, and what are your favorite uses?

Tonight I have a fat chicken from Costco in the stockpot with vegetables to make stock. I will refrigerate it tonight and process tomorrow.

7 pints of plain tomato sauce. The last box from the garage. My summersí harvest yielded me more than 25 quarts and 50 pints of tomato products!

Yes!! It gives me great pleasure to can garden-in-a-jar for my grandchildren. When I was raising my own, I had reason to can but so little time. I still did it. Now, I have the time and the grandkids give me the reason. Itís so much more fun!

Seven pints pear slices for my newest grand babies who will start eating solid foods next spring/summer.

Plus two pear breads (for the freezer) and a pear/apple crumble using Kristaís recipe on the ďpear crumbleĒ thread.

I agree! My full pantry is my happy place!

Last night I finished 5 quarts seasoned tomato sauce. Almost done with the tomatoes, just one 5 gallon bucket of greens that are still ripening, so I get a slight reprieve.

Oh! Judith! You made me laugh out loud! Donít tell the hubby, itíll give him too much ammunition!!

I once set the water running in the laundry room deep sink; something needed to be soaked I think. Came back 15 minutes later to find two inches of water across the room! I was headed out the dooró-good thing I saw it before I left!,

Judith, I'm also pondering the concept of a yearly hiatus from the hubby. I wonder how I could convince him to take up a six-week long hobby like hunting? #128521;

Judith, thanks for the recipe.

This morning I pressured canned 4 pints red kidney beans with ham.

In the morning I hope to can red kidney beans with Tex-Mex spices/herbs to be used in chili.

After canning tomorrow I'll still have two more lbs of red kidney beans. May let them sit on the shelve a little longer so I can do split pea soup and more broths.

Sara -- I think I do it different every time. This time 3 cups vinegar 1 cup water #8531; cup sugar 2 tablespoons pickling spice, 1 tsp salt. If I put beets in then I use the juice from the can too.
The problem with the flooded kitchen is that my plumber will be gone for 6 weeks. From what I can tell looking under the sink is two of the drain assemblies are cracked and corroded and the whole thing needs to be replaced. Fortunately I have a washtub in the laundry room that will work just fine for now. 20 years ago I would have attempted fixing it myself but now I have no idea where the pipe wrenches are and my arthritic hands don't feel like doing it.

Barbara I'm so sorry for your flooded kitchen. I know that sinking feeling in the pit of your stomach when you see water gushing out of a pipe. On a lighter side good job on pickling eggs. What brine recipe did you use? I've pickled eggs using left over pickled beets juice.

Sara, I checked my canning books and all only give directions for water bath canning tomato sauce. Sorry I couldn't help you with pressure canning.

Takes water longer to boil over 1000 ft. that's why time is adjusted for high altitudes.

2 dozen pickled eggs. Finally! I shelled them under running water, then went to the pantry to get my step stool so I could get a 2 quart jar on the top shelf. Coming back from the pantry I saw the kitchen floor flooded. Grabbed towels and started pulling everything out from under the sink. Letting it dry out now. DH left for hunting this morning. He wasn't even gone 6 hours before I flooded the kitchen. I wonder what I'll break next. At least I got my eggs pickled; now I have to have patience and wait til they are ready to eat.

Oh dear Sara!
I saw that cold snap heading toward your state; sorry you are in itsí path!

In your downtime, can you offer some advice? Iím finding conflicting information about pressure canning tomato sauce. Some say process at 5# pressure, some say 10# (Iím at 96 ft. Elevation) Being tomatoes I get nervous about doing them right. What do your resources say?

Sara, glad you were able to save your tomatoes for sauce.

It's 22 this morning so my canning is on hold until I see 40 degree temps again. Should be warmer next week.

Today I put up 16 pints tomato sauce. Tomorrow I still need to process the juice that drained off the tomatoes.

When the frost was hitting I picked all the tomatoes that were showing yellow or redóabout 40 lbs. I put them and also five plants with still-green fruit on them , roots and all, in the garage so they could continue ripening. The plants were hung over a 2x4. Half the fruit finished ripening in a week. So I am still saucing tomatoes even though the garden is dead.

Sara, like you keep several different kinds of dried mushrooms on hand. They "beef" up a lot of dishes.
