Posted - Jul 18 2015 : 1:24:20 PM So far I've put up dilly beans, kidney beans and today is turkey stock. When I'm done today I will have canned 24 quarts. I still have 3 turkey carcasses to make more stock from.

Posted - Jun 29 2025 : 06:05:56 AM Yesterday my great niece gave me a box of tomatoes from her garden. I weighed them - 7 lbs Romas - 6 lbs of a large tomato. Today I will prep the tomatoes along with red onions & potatoes to make soup starter. Hope to can tomorrow after my new front door is put in.

Posted - Jun 29 2025 : 04:38:23 AM Thanks Sara. Trying to keep myself busy here, waiting on weather to make hay. We have had so much rain this month, and have not cut any hay. It will take a while for the ground to dry out, so we can cut hay.

Posted - Jun 28 2025 : 03:23:08 AM I got the electric canner out yesterday. Canned up 5 pints of leftover pulled pork. Thought I would give the recipe a try. I made the bbq sauce in the recipe, and packed in the meat. All sealed. We taste tested last night, and it was ok. The recipe uses molasses, and that might be the flavor I am not thrilled about. But an instant meal in a jar will be handy to have on the shelf.

Posted - Jun 27 2025 : 2:04:52 PM Today I put up 7 24oz Ball jars of green beans on the bottom & baby yellow potatoes on top. All sealed. Aldi had a good sale on both, so it was a good time to can.
There was enough left over to cook and have one serving. I enjoyed it for a late lunch.

Posted - Jun 22 2025 : 3:44:30 PM Lisa, Liquid Smoke comes in handy for a lot of dishes. I like a sprinkle in my chicken salad. Gotta be careful though because it is powerful stuff. Let us know how it turns out in your bread & butter pickles which are my favorite pickle.
Denise, if they turn out good, they may not last to winter. Like I need an excuse to put up beans.

Posted - Jun 22 2025 : 3:04:59 PM The Bean Queen aka Sara reigns! Michele, I have some garlic going but not sure how it will be after all the rain. The scapes will be nice dried. I bought some smoky bbq bread and butter pickles at Aldi, and was thinking that I cloud replicate it with a tad of liquid smoke in the mix before canning. They have just a hint of smokiness and are quite good. Gotta get my cuke going first. LOL |

I have a recipe for cherry cobbler that uses tart cherries in water so I try to get 6 jars for that. There will be more cherries in a couple days, I'd love to try pie filling.

Posted - Jun 19 2025 : 04:39:51 AM Heather have you tried canning cherry pie filling? That turned out oh so good for me last year. For one quart jar- 3 1/2 cups of cherries, 1 cup sugar, 1/4 + 1 T of cook style clear jell, 1/3 cup of water, 1T+ 1 t lemon juice, 1/8 t cinnamon, 1/4 t almond flavoring. I doubled this and it fit perfectly into 4 pint jars. Mix sugar and clear jell. Add water, cook stirring constantly till thick and bubbly. add lemon juice; boil one minute. Fold in cherries, cinnamon and almond flavoring. If your over 1000 ft above sea level, water bath for 35 min. If using frozen cherries, strain over a bowl, thawing with hot water. Save the water and use in the recipe.
