This is the time of year that I start to think about stocking the freezers for the holiday season!

What are you tucking away? Anything and everything is fair game to share! For the holidays or just for whatever!

Yep. Me too on the peppers and O'Brian potatoes for the freezer. Also got all my garlic harvest chopped and marinating in olive oil in the fridge. Should last all winter. Usually like to have some braids too. But this year I just planted Mary Jane's garlic and it is all hard neck. So no braids. All done. Will make some apple pies for the freezer today while DH is glued to TV football. Good snowy day activities up here in Big Foot country.

Peppers were on the chopping block today. I chopped the green peppers, some of the red and yellow pepper and bagged them separately to add to dishes this winter. The rest of the peppers I cut into strips and bagged them for fajitas or other dishes. It is always nice to pull a bag out of the freezer when we have the urge for Mexican or stir fry. I will chop onions and potatoes tomorrow and mix up bags of O'Brian potatoes for the freezer.

A little rain can straighten a flower stem. A little love can change a life.

Joan, welcome to our kitchens and conversations on freezing. You do have freezing down pat. Hope hunting season is good to you and your freezers.

Last week I bought a small rack of lamb; marinated it in cold brewed coffee overnight; cut into chops; roasted in oven; and froze 7 chops. The other two I had for lunch.

Ladies, I have read all of your posts in this thread and am amazed at all the freezing y'all have done! It is so inspiring to me. I have plenty of freezer space with two refrigerator freezer compartments and one big upright freezer. My husband hunts and fishes so we have deer meat, wild turkey and lots of fish. Of course, it will soon be time to put more deer and turkey in the freezer. He is also hoping to go wild hog hunting as well, and we are planning to buy a cow and split it with our daughter. I am excited about all the things I want to freeze from all of the items y'all mentioned.

Jaime, is there a recipe for the Puff Pastry Twists you made? I've never made a pastry so I need a few more details....lol. They sound wonderful! My husband and I are diabetic, but all those cookies sound delicious! When I make something sweet that we can eat, I usually freeze it in individual servings so we are not tempted to eat too much at one time. I usually give half of it away as well.

Krista, your Ranch Chicken Tacos sounds so good that I am making it this week. We love Mexican food, especially tacos. I also like the idea of using the leftover chicken on salads. We eat lots of salads.

Sara, the things you cook and make meals out of for the freezer has given me so many ideas. I want to use double the meat to make extra meals at one time to put the extras in the freezer. It will be much easier to have something ready to cook instead of having to get all the ingredients together. I have no idea why I have not thought about that so Thank You, Thank You!

Denise, I have to admit that I don't use my crock pot as much as I should since my DH bought me an Instant Pot, but I love your idea of fixing meals in servings of two to freeze to cook in both of those pots.

As I said, Ladies, y'all have inspired me! I do have a canner and a dehydrator, but have not used them much so I will be checking out the threads on those soon. BUT freezing, I have down pat - just need to expand what I freeze with all of your items. Thank you so much for participating in this thread!!

Don't know about other Farmgirls, but I always end up with sooooooooo much squash at the end of summer. This year I ended up after a summer of making all our favorite squash recipes, with ten two-cup bags (sealed with a Foodsaver) of grated zucchini and an equal amount of yellow squash. All set for making those delish casseroles and breads all winter. Yum.

That sounds yummy, Sara!!! DH doesn't like pork so I don't make it often - sounds SO good!

I've mainly been freezing raw chicken in marinades lately - some in Oven Chicken Fajita marinade, some in my recipe for "Best Chicken Marinade", some in Balsamic Marinade and some in Cilantro Lime.

Thanks Michelle. Cooking for one has its challenges. I bought one of those small pork loin which is a lot of meat for me. I used part of it for the 4 hobo suppers and roasted the remaining part in a pint of my hambone broth. It was so tender and made a tasty sauce. Had it for lunch and enough left for lunch tomorrow.

This morning I made four hobo suppers with slices of bar-b-que pork loin, carrots, potatoes, and onions to freeze. Should do it more often because it's easy and the frozen suppers come in handy.

We have a big pecan tree in our yard. I used to spend many hours with a hammer and pick and gave away some and froze some. They had very hard shells but tasted good. Every year they would send me to the doctor for back problems from picking up pecans. Neither of us can eat them now but squirrels have arrived in our area so I just let them do the picking now.

Michelle my sister takes the pecans to be cracked by a machine here in town. The last batch I picked out there was only 4 pecans that weren't cracked and I had to crack with my grandmothers cracker. The Texas native pecan is the hardest to pick. Most of my sister's trees have thinner shells but they are not as thin or as large as the papershells.

In the fall I used to buy a large pkg of mixed unshelled nuts and put in a wooden bowl with cracker & picker. Put bowl on table next to my chair and crack a few each night. And you are right the walnuts were hard to crack but good eating. I do miss eating nuts. Now & then I cheat and eat a few but usually pay with a tummy ache.

How very nice it is to have your own pecan trees. Sara are they a pain to crack and pick out? Black walnuts are very hard to crack and pick out the meat.

Sara I'm slow getting around to telling you how impressed I am with your planning ahead and freezing dinners. Freezing your home grown walnuts is an extra bonus.

My sister has pecan trees and she takes them to be cracked. I picked out 2 1/2 lbs for her. I like sitting in front of the TV and picking out nuts. Doesn't take much to entertain me these days.

I was given two huge zucchini so today I made stuff zucchini with meatloaf mixture. When done and cooled I will cut them in half and freeze individual halves. Will be enough to share with sisters.

December is my crazy month, as we gear up at the food closet to prepare 200 Christmas dinners to be distributed to the needy. I’ll have 7 or 8 evenings in the next 2 weeks when I’m not home to cook, so I’ve been making foods for the freezer. Two pounds of taco meat cooked. I’m making broth from 2 whole chickens, and the meat will be going into the freezer for quick somethings.

I’m also cracking and freezing walnuts from our orchards. I’m supposed to be emptying the freezer for a hog and a steer! I’m not doing too well on that!

Two loaves of pear bread. And two and a half cups of cooked winter squash, to make a double batch oh pumpkin bread sometime in the future.

I put up two more dinners of vegetable beef soup for the crockpot, finally using up the very last of the season’s fresh green beans. I love the hours spent picking beans, but I’m ready for the break!!

Today I am freezing two big pans of mustard greens I picked out in the garden. I couldn't leave them out to freeze. My chickens kept me company---there is no where I can go around here that I am not with an animal They are so much company and a comfort to me..

Judith, that is so AWESOME!!!

I feel that the closer we get to the “natural “ way of living, the better our lives are.

I have been putting home-grown pork in the freezer for many years now, and I have acquired sheep to add to that. But I would love to have someone in the family to add some geese (which migrate over our farm) and deer (which roam our acres and even chew up our irrigation hose) to my freezer! To harvest wild animals from the land and sky would be so amazing!!

Sara -- He hunts deer and hogs and they go in the freezer. About the only meat I buy anymore is chicken and fish. What he brings home lasts us thru the year. Since I've been eating the wild game my bad cholesterol levels have really improved.

DH is leaving on his 6-week hunting trip soon and I don't like to cook for just myself, so I have been freezing leftovers. It will keep me from dinners consisting of cookies and potato chips.
