Chocolate mint does seem to be a favorite. I'll go out in a bit and cut rosemary, mint, and Syrian oregano for roasted leg of lamb.

Just put a big batch of Cilantro in the dryer this morning. My house will smell so good when I get home.

Cut back my lemon thyme that was growing too close to the basil. Sure could smell the lemon this morning. Will make for great recipes when dried.

Thunderstorms & herb harvesting sure don't mix. Michelle you've reminded me I need to dry the lemon thyme. Maybe later this week.

Herb drying time in WI. I need to get at them. I do mine in the dehydrator, usually taking off the leaves, if need be. I was hoping to pick some this morning, but we are having a thunderstorm.

I let my Syrian & Italian oregano go to flower for the bees & butterflies, so both were overgrown. I harvested them this morning and they are now drying on kitchen table. When dry I will put them in large paper sacks with holes and hang in Yellow Rose Cottage. Drying in paper sacks with holes keep the herbs clean.

Denise it is good in veg soup. Made some this week with just dried cabbage, canned tomatoes and potatoes. A little dab of dried Syrian oregano too.

Drying cabbage this morning. Gotta say that's the toughest cabbage I've ever cut into. It must have been on the last wagon train coming into Texas.

Denise I got mine from Amazon several years ago -

I now shop mostly Thrift Books https://www.thriftbooks.com/sitemap/

I checked and they have a new one for $12.07 - shipping free because all $10 and above orders or free. Less than $10 the shipping is 99 cents.

I buy a lot of used books from them and am always happy with them.

The book has recipes for basic drying and for things like drying flowers for crafts.

Haven't done the blueberries, pears or bananas yet but my granddaughter was helping so now we have celery and peppers drying. Not sure how long they will take. I diced some of the peppers and also sliced some. We also made pickled eggs today too. Not for drying of course. I wondered if any of you would have any book recommendations for dehydrating. I have Mary Bell's Complete Dehydrator Cookbook but would like suggestions for others that have been helpful to any of you.
Thanks!

Thanks Michele!
I was able to get pears to dry today as well as bananas. Thank you for the tip on blueberries. I will save the juice from thawing maybe I can use it for something.

Thaw frozen blue berries all the way before drying. Otherwise you will have a mess of liquid in your dehydrator. If using fresh you have to poke them with a needle a few times to break the skin so they can dry. Freezing and thawing breaks the skins Dried pears are the best. I like them much better then dried peaches.

I do believe I will give them a try as well as some of the frozen fruits I have. I was thinking the dried blueberries would be good in granola. But I was wondering about the thawing process.
