Posted - Nov 21 2020 : 3:47:06 PM Just fresh out of the oven.. My version of Banana Bread... I had to make some modifications,(due to not having certain or a shortage of ingredients),,, like using butter instead of veggi shortening, and I used 2/3 of Bisquick and 1/3 of coconut flour Rum instead of vanilla extract and since I didn't have any walnuts,, yep! I used chocolate chips.. O-M-Geepers! It turned out Fabulous! Got a pot of tea brewing to have with the banana bread..
as you can see,, hubby and I couldn't wait for the tea to brew,, had to sample...

Judith,, nope, I didn't have to add any extra liquid with the coconut flour. I had 3 sm-med very ripe bananas that equaled about 1cup.... and the Rum just gave it that extra yummy kick..

Posted - Nov 23 2020 : 12:32:07 PM This looks delicious! I have everything except for the bananas. And I like your substitutions better. Chocolate chips sound so yummy. I am not much of a nut person and prefer not to add them to anything. I will be saving your recipe to try when I have some bananas!

Posted - Nov 22 2020 : 1:47:35 PM Grace - Sounds good -- I may try this today as I have a brown banana in the fruit bowl. Did you have to add an extra egg or liquid due to the coconut flour? I will be using CarbQuick instead of Bisquick.

Even though when I left Spokane 2 years ago...I said, "I will never be back!" and I meant it...I might just have to hop on a jet plane and swoop in for a taste of that diviness!! LOL It Looks great! I was just contemplating making some cinnamon rolls now, I think I must do just that! It will make my tummy happy and my house smell good too! I must admit you are a very creative cook to switch up that many ingredients and have it look, smell and taste Fabulous! Way to go Farm Sister!!!

2c of bisquick/Fisher/Jiffy type mix 3/4 c sugar 1/4 c. veggi shortening 2 eggs 1 c ripe bananas opt: 1/3 cnuts mash the bananas. mix sugar, eggs and butter add mashed bananas add bisquick and blend together. add nuts 9x5" loaf pan greased- I use spray on canola oil Bake at 350 for 55 +/- min

remember,, you can always play with the recipe like I did. I sub'd the shortening with butter and used less bisquick and added the coconut flour, 2/3 mix & 1/3 flour. The recipe doesn't call for vanilla, but I did add a tsp of Rum.
