It is that time of year again when our gardens overwhelm us. We are excited to preserve that goodness for the winter. Reading some posts I see that there are quite a few unsafe food preservation practices being posted.

As a former extension agent, I have a real hard time seeing such unsafe things still happening. Kind of makes my stomach crawl because I have taken calls about exploding cans and sickness.

I would highly recommend only using recipes from reputable sources that would be considered safe because the recipe has been tested in lab type settings. BEAR IN MIND - there is debate whether the blue book is considered "safe".

You can make up your own opinion on what you consider safe for your family. I don't think it's worth the risk ("We've always used hot water bath on our corn and nothing has happened.") but you should make those recipes choices informed.

University of Georgia Extension is a leader in home preservation & safe recipes.

I also found a great website that appears to presents factual information that will make you better informed about home preservation topics. I liked that they sited reputable sources and gave background information.

Remember - if you alter a recipe, you are not using safe recipe.
